My wife makes tsuivan at home here in Southern California all the time. It truly is one of the best Mongolian dishes and the favorite of our children. My wife does it the same way, usually using prime rib or beef steak and adding more vegetables - usually cabbage, carrots and rutabaga and other root vegetables. The real key to why I think I love it along with many others is the incredible chewiness of the noodles themselves. Unlike other traditions, Mongolians fry the noodles instead of boiling them. That chewiness is unlike any other noodles in the world - I don't know of any other cultures that can create such a chewy noodle - and the meat and vegetables add to the savoriness of the dish. Personally I love it with siracha. Everyone should try this, especially if you visit Mongolia.

to be honest with you horse meat is the most healthiest meat you can ever eat. for reasons ... if the horse is sick it dies ... if the horse is injured it dies ... if you see a healthy horse there is nothing wrong with it... horse is a picky eater he only eats the things it likes. its not the same like a pig or a chiken or a cow. all other animals can carry diseases but a horse is pure it never carries anything. thats why its the most safest and most delicious meat you can eat and its healthy .

This dish is definitely the most popular dish in Mongolia. I guess people order more tsuivans a day than other dishes combined if we don't count fast food like huushuur and buuz. Also this version (on video) is the simplest tsuivan. It's like margherita pizza, i mean its the simplest one in terms of pizzas. Every one has their own recipe. I like to cook tsuivan with bell pepper and carrot, and of course there will be main ingredients like dough meat and onion.

I've been around the world a bit, and if someone asked me where I would go again, I would say Mongolia. Going to the Gobi Dessert took around 10 hours with nothing but the plains but for some reason I was never bored on the road. What a beautiful country, and good people too.

@@weetbix4497 It's such a strange language. Truly an anomaly amongst Asian languages. It sounds so much like Russian, yet it isn't and I know for sure cause I'm learning Russian, and all these words are nonsense in Russian. Yet...at the same time, Mongolian is also trying really hard to be Mandarin. There are very Chinese sounding words in it, yet so many Russian sounding words. Then we get words that are just truly Mongolian like "Tsuivan". WHERE in Chinese or Russian does a remotely similar word like this appear? It's truly amazing how interesting their language actually is. They're basically Asian Slavs, and that is the most apt description I can think of. Hell, even their cooking is closer to Russian style than Chinese, but still retain very Chinese elements. I'm rambling here, but I get excited talking about Slav, and Asian culture.

Mongolian cooking seems to be quite the opposite of Indian cooking for example. You guys uses very minimal seasonings or flavor enhancers.🙂

Утебя в голове каша! У калмык нет точно такого блюдо. И вообще "Хуурсан мах"- на монгольском языке -дословно означает - жареное мясо, а не название блюд. В ролике монгольское блюдо Цуйван, технология которая непростая, лапша готовится отдельно в пароварке. И отсюда уних уникальный вкус, потом только добавляется жаренное мясо и овощи с соусами. Увас сроду нет и не было таких блюд.
