Quick video on how to make shiny edible isomalt (sugar) gems for your cakes, cupcakes or other decorations.
Materials:
Isomalt (astore.amazon.com/articakecomp-20
)
non-stick pot
parchment paper
oven mits to protect your hands
scissors
candy making mold (buy from amazon or local cake store)
latex gloves to handle finished gems so you don't get fingerprints
Isomalt is a sugar substitute that sugar artist have used for years in place of granulated sugar because it is less prone to yellowing, clouding and crystallization. You can make gems out of sugar but it is more advanced. Isomalt is a good way to start out making sugar gems. You can google "isomalt" and find places to buy them. Amazon.com is a good place to buy a bag. It isnt that expensive.
Isomalt IS edible but like I said, it is a sugar substitute and it is made from the same stuff that sugar free candy is made from so it can upset your digestive system if you eat a LOT. It is not meant to be eaten in large quantities, but more for small decorations and eaten in small amounts.

I'm so glad you put the warning about isomalt in the details. I've had friends in baking classes get pretty upset stomachs from nibbling on it too much.

Liz, Thank you so much for this tutorial. Most others always say to add water, but I like the fact that you don't have to. I'm a rather impatient person when it comes to waiting for something to come to a certain temp. And I LOVE the fact that we are neighbors😉 I currently live in Can by and have started my own Cake Decorating business. Again, Thanks for all your awesome tutorials. I will be doing your marshmallow fondant recipe next.

Hey Elizabeth 😊 thank you for the tutorial. I have two questions: 1. I don't think you said what temp. to let the isomalt reach when boiling. 2. How do you keep it from crystalizing?

Thanks so much for responding so quickly! Your tip worked perfectly and saved the day as I'd already poured the isomalt into fondant molds and wasn't keen on remaking those! Luckily the syrupy goo dripped out and I could pour the good stuff in and it set just fine. Thank you!

Thank you for your tutorial.. Amazing how you do with isomalt. How many degree is that when you decide to turn off the stove? And how c many degree to cool it down for piping? Can we mix it with flavor liquid like almond or orange?

on the parchment paper i follow your instructions and on the top i used a black office paper clip and it worked and hold it tight, i gave this a try for a princess party and it was a hit thank you for your video it was so easy to follow

Great tutorial Elizabeth. I have a question: how do you cool the gems in the candy mold? Do you live them at the environment temperature pr put it on the fridge? How long it takes to cool? Thanks.

Can it be added to a fondant cake, put in the fridge, and taken out again? I guess what I'm asking if they will be fine in the fridge and taken out.. ( sweaty isomal, melty etc ) 😬 ty!!

Thanks that was neat. Have you ever used a metal candy funnel with a dowel rod plunger (dowel with a ball to cover the whole on the funnel) ? I think it would be safer. Great informative video. Thanks again.

Hi Elizabeth! Thank you for such a great video. I actually took a sugar class a couple of years ago working with poured and pulled sugar, and they never showed the piping bag method, which is amazing. I do have a question... what to you use to attach your jewels to fondant? Or actually, could use royal icing on the back as a glue? I mostly make sugar cookies these days, but I'd love to add some jewels or dew drops onto a set!

Hi Elizabeth, I watched your tutorial and made the Isomalt gems, Great Tutorial! I've run into a problem its been pretty warm outside and my gems were sweating so I put them in the fridge thinking it would help, but the gems lost their textured look. Any thoughts? If I keep them out, how do I store them?

I always have problems making my isomalt gems look like diamonds. Whenever I put them on my cake, they blend in with the color of the fondant that I am using on the cake. What do you put on your gems to give dimension and a diamond like look. Thanks so much!

It is so funny that I have to do some gems today using isomalt for the first time and when I open up my youtubr, this us the 1st video on my feed! Awesome! I just wanted to know, *at what point do I add color? I need to make It light pink. *how long does it take to cool? I only have a mold with 3 gems. *if it cools, can I microwave it to get it soft again or boil it again?

if you need to add color, use a candy thermometer. Add the color at 280. Just a TINY bit goes a long way. Cook until it reaches 325. Pour at 300 degrees into your molds. Takes maybe 10 minutes to cool fully. Spray a little pam in your molds and wipe out the excess so they don't stick. Yes you can re-melt in the microwave.

While the thermometer is in, you could use it to gently move the thicker isomalt out to the thinner, outer part, yes? Awesome tutorial!

On your blog you talk about painting the back with luster for extra shine. Could you just dust the luster dust over the molds before filling them? Or would the hot isomalt just absorb the luster making it cloudy?

I watched a show (thinking it was Cupcake Wars. It's the one where each group makes cupcakes for some big event and the winner gets their cupcakes showcased at the event. They even design the display the cupcakes sit on) There was a lady who made isomalt decorations and the judge was mad and asked her "are you trying to kill us? You can't eat isolator!" Because of that show I thought you could not eat it. So THANK you ! Will be using it on cakes more!!

Loved watching this.I just watched a video on using sugar to do this. These are so much clearer than with the sugar. She used gels to color her sugar. I would think that you can add this as it is being melted using liquids since you don't stir it. I can't see why you couldn't stir if you had a special utensil that was only used for this. Thank you for making this.

Can you remelt the jewels and use them for a different application (ie piped designes)? Can you remelt the isomalt in the pan and make more jewels? At what point in the process would you add colour?

Hi Elizabeth, I tried to do this with the piping bag. However as I poured the isomalt into the piping bag the isomalt had already cooled that the tip just hardened and it was a mess. Can you comment on what I may have done wrong? Alternatively can you provide the temperature at which you poured the isomalt?
