I agree with all but one..the first one..if you properly flour your cake pans or spray them with baking spray you won't have an issue removing your cakes, you can also use parchment to line your baking pan for easy removal. Letting your cakes cool in the pans allows for less moisture to escape and your cake to dry out. Your other suggestions are very helpful....

Yes, it does. Ideally, you want to allow the cake to cool on a rack like the one shown on the video. This helps air circulate around the pan. Thanks for watching!

I must admit, I didn't level my cake layers before frosting them and also the icing, though delicious, became too runny because of too much lemon juice. I didn't know there was something called a leveler. I must get one before my next attempt at frosting! Thanks for the useful tips!!!

I always leave my cake in the pan and never had a problem removing them from the pan... I've been selling cakes for 3 years now. But I have good quality pans.

Yes, the quality of pan does make a difference! Prepping pans with parchment paper vs. spray also affects the likelihood of sticking. I've been caking for quite a few years. I forgot my cakes cooling in the pan on a few occasions. The result wasn't that they were hard to remove but it sweat in the pan, leaving me with a gooey outer layer in which I had to shave off more than planned.

I skipped leveling some of the layers. Used the cake that was taken off to fill in the sides making a different dimension to the finished cake. Making a unique design once cut. Worked out. I like your leveling tip. thanks. Putting your fresh out of the oven cake into the freezer ( wrap with Seran wrap) keeps the moisture of the cake in the cake . I encourage leveling first. Also cold cake is easier to ice without needing to crumb coat. Thanks. Cheryl

I have a few questions: 1) How long should the cake be in the pan after its done baking?, 2) will having a crumb coat, then cooling the cake, and adding the second layer of frosting make the cake dry or will it still be moist?, and 3) how long after baking should you start to frost the cake? I also leave my cakes in the pans while cooling. I have Wilton pans. I also spray and use parchment rounds (that are sprayed)and I also use cake strips, to avoid the domes

How do I make my stiff frosting into something more "whippy"? Do I just let it sit out and warm up a bit? Or do I actually whip it a little?

Yes, you would need to loosen the icing by 1) letting it sit out to warm up (hot, humid environment) OR 2) adding water or milk to the icing. Then whip it! Thanks for watching!

i always make the "mistake" (if you call it a mistake) to either ice the cake with too much or too little cake filling, and it often turns out to be uneven or too thick layers when u cut a piece :(

Thanks for sharing! This is referred to as having the proper “ratio”. While it’s something to be mindful of, I wouldn’t call it a mistake per se. Using a leveler on your layers and a turntable while applying your filling will help tremendously. There’s nothing wrong with using a ruler as well… 😉 Best of luck on your next cake!

Usually I wait for the cake to cool before turning the pan over and it ALWAYS would fall apart. This time I was being impatient so turned them out as soon as I took them out of the oven. They came out so much cleaner.

I ice the sides the wrong way sometimes, and also have skipped crumb coat due to poor planning of how long I needed to finish the cake the right way. I've torn cakes up with too-thick frosting, too.

I've used icing that came right out of the store bough container. It was so "silky" that it started slipping down the sides of the cake. My cake was room temperature. I'm open for suggestions.

Thanks for commenting! It sounds like the icing was too thin because it ended up sliding down the sides of your cake. Depending on the brand, you could thicken it by adding a tablespoon or two if powdered sugar to the icing. Curious: What brand were you using? 🤔

@@bonitamig Duncan Hines can be quite soft from time to time. My experience is that no matter how much powdered sugar you add and stir in, this type of icing/frosting may not thicken up. I would encourage you to try adding one tablespoon of powdered sugar as insurance next time you cover your cake. Please return and let us know if that helped! @@AsiaCoffee I've never made my own icing because buying it was just easier. I generally buy Betty Crocker and Pillsbury and haven't had this problem. I won't buy Duncan Hines again.

I bought this icing smoother from my local cake supply store years ago! I've misplaced it since this video. I've been using a large smoother from Colour Mill that I bought at SoFlo Cake & Candy Expo earlier this year. Before that I had been using a tall acrylic one. I should try to add those to my store.
