I usually "crack" the garlic or squish it so it breaks open and has more surface area to release the flavor. You can use the side of a knife or just smack it with a rolling pin like my mom does. I find that it helps the garlic absorb into the broth and the broth into it to make it a tasty thing to eat. 😋

Yeah, fun facts: 1) Only Koreans can afford that amount of ginseng per recipe; 2) This is traditionally served in mid-summer to maximize therapeutic effects; 3) Fresh ginseng (≤4yrs) are much more affordable should you have trouble sourcing that part of the ingredients; 4) Do select sticky rice for the stuffing.

I was thinking of making filipino arroz caldo tonight, and your sangyetang recipe came up. I'll try to make this soon. The fall-off-the-bones and yummy stock that I get from pressure cooking really makes investing on an instantpot worth it. Its my favorite appliance I bought so far. JFYI: Arroz caldo is almost like the second recipe, without the ginseng, veggies and jujubes. We use ginger and garlic, chicken powder, and green onions on top. best side dish for it would be crispy tofu and pork belly cut into cubes, soaked in finadenne.
