Some potato-related advice for anyone: 1. Stir-fried potatoes: To prevent the potatoes from browning, add a little vinegar (not for flavor). It lowers the pH and prevents oxidation. 2. Baked potatoes/wedges: For a thicker crisp layer on the exposed potato, try soaking in hot (but not boiling) water for 10 mins.

I have 2 boxes of potatoes for 4 people. I already tried the pancake potatoes but I forgot to put the salt. I will try that again and add flavor. I adore his personality and Claire is a lucky woman, taste tester is easier than cooking it, but his recipes seem easy to replicate. I learned a lot about that potato starch after the blended potato for the potato pancake.
