When I first moved to North Carolina I eagerly searched for a good Chinese restaurant. I tested the 4 restaurants in my small town and a couple in the larger city nearby but each time I was disappointed. I guess living in the NYC area for 35 years and 7 years in Seattle spoiled my palate. After watching your channel for the last year+ I no longer miss good Chinese food and I no longer miss my favorite Korean restaurant. I now feel comfortable cooking almost all of my favorite dishes and even some that I did not realize I would come to enjoy. Thank you and Claire for improving my cooking skills and my diet. Much good fortune to you both !

I made it tonight for dinner and it was DELICIOUS! Definitely better than my local restaurant! The only difference is that I double fried the chicken in my air fryer instead of deep frying.

@@cherub2918 My air fryer (Instant brand) cooks fast so after I coated the chicken with the potato starch I let it sit at room temp for 10 minutes while the air fryer heated up to 350 deg F. I then coated the chicken pieces well with avocado oil spray and fried them for 6 minutes, turning them half way, then cooled them down to warm in the fridge and then resprayed them with oil and air fried them again at 400 deg F for 4 minutes. Overall the chicken turned out very crispy, but not as well browned as if it had been deep fried.

Don't worry about it! You can shallow fry so you don't have to deep fry!! 😍

I also prefer potato starch over corn starch. It coats easier, doesn't shed much while cooking in oil and it tastes better.
