I used to watch your channel all the time in high school to learn how to make my favorite Korean banchan. Nice! It looks a lot like my quick go-to! I actually don't use the egg, just rice, green onions (I also sautee the white parts in the oil before adding anything else, then add the green parts at the end with residual heat), a large pinch of salt, large pinch of sugar, large pinch of MSG, dark soy sauce (to color) and a bit of oyster sauce. If I'm feeling generous, I'll just add any protein I like (pork, shrimp, spam, etc.)

I use a 50/50 blend of basmai and jasmin rice for fried rice dishes, I learned this while living in Hong Kong back in the 1980's. I use a ratio of 1 to 1.5 rice to water by volume as this works for my personnel presence for all my recipes, this is a general rule but can be effected by the age/humidity/method of storage and even the brand of rice. Rather than just plain water I add knorr chicken stock cubes or LKK chicken powder (Red label LKK has MSG, green label is none MSG) and a pinch of salt. One chea t we often use is to use microwave basmati rice if you have no old rice orCBA to cook some, not perfect but deals with that fried rice craving or late night munchies after a night out or an evening in. Rather than may the egg as an omelette or scrambled eggs, which you then break up into chunks I use the method where you rice the rice first then pour the egg mixture over the rice so the grains of rice are covered. For extra egg I will add scrambled egg to the rice. With the egg mixture I add rice wine and sesame oil, with a pinch of white pepper or Korean chilli flakes. This does make a soggy mess to start with but will soon be absorbed and/or evaporates off excess moisture, do not increase the heat if you are using a frying pan as this can cause the mixture to scorch or burn if you do not toss/ stir the rice enough as the shape of the frying pan does not lend itself rapid stirring or tossing like a wok does. Adding the egg mixture this way I learned while as at cooking demo by ken Hom, great chef and an excellent racanteur. If you want that takeaway garlic flavour use rehydrated large garlic granules, learned that from the missus who met while when worked in her families takeaway. Also use decent soy sauce LKK or pearl river bridge which are fermented and not the hydrolysed crap which can give an off metallic after taste ruining all the love and effort you've put into preparing your dishes. Using spring onion / garlic oil can really raise the flavour of you dish as says more spring onion more better. Plenty of good videos on how to make flavoured oils on KZbin, and a good ingredient to boost the flavour of many recipes 😀 Thank you for the recipe, take care God bless one and all.

Id have to tweak this recipe a couple ways myself. Adding more eggs and sing less rice is a given with my dietary restrictions. Also, unfermented rice causes my eczema to flare up so I'd have to ferment before or after cooking the rice. I tried that before cooking abd the only real downside was the acidity. But if I add enough seasonings, mix with kimchi, or add a bit of sweet to the dish it balances out fine... But yeah, aside from that it's a really great option.

It's unbelievable how well rice freezes, so I make a big batch of fried rice on the weekly. Since I'm an American, I of course have to make a bastardized version. I swear onion, bell pepper and pineapple is a magical flavor combination. In addition to the oil and soy sauce I add half a tablespoon of honey, and a shot of cooking wine and it makes a hell of an awesome dish. Obviously whatever protein you want. I add bacon because I'm a dumb American. And get rid of that better help sponsor. Everyone's saying how terrible their services are. Does money really matter that much?

This video should have been a redo. You were supposed to scramble the eggs in the oil and REMOVE from the pan BEFORE the eggs get brown. Then add a couple more tablespoons of oil for the ginger & garlic THEN add the rice, soy sauce, seseme seed oil, sugar,salt, white pepper, and THEN reintroduce the eggs, some frozen peas & carrots ( forget the green onions👎). After constantly tossing everything a few minutes more, the last step is to add 1 tablespoon butter or margarine for a nice polish, toss some more, and THEN It's ready to serve👍.
