A fun fact, in England it is typical to call it "shepherd's pie" if we make it with minced beef and "cottage pie" if we make it with minced lamb. Both are delicious.

You've got that the wrong way round. It's Shepherd's Pie if it's made with lamb and Cottage Pie if made with beef. A shepherd herds sheep hence when made with lamb it's Shepherd's Pie.

About mince, yes while butchers will have cheaper off cuts to use; there are also many butchers who will also sell or upon request make mince with good cuts of meat. A good butcher has respect and good knowledge of an animal, the cuts and care. Like a good chef. My dad’s a butcher (in nz), and a good butcher will always focus on quality, taste and never leave anything to waste (he will usually use the off-cuts for pet mince only). I don’t know about Aus- but at least in NZ with a local butcher this is usually the case. Sadly some butchers (mainly in supermarkets) do not care for the animal or the actual technique, so that’s where you see a lot of poorer quality cuts and processing.

Grease is definitely not food for the brain. Glucose is the ONLY molecule the human brain can use for fuel. All carbohydrates and fats can be turned into glucose to support the brain. Maybe you are thinking of the fat (grease) called Omega 3, which is mainly in fish. Fish grease is mostly omega 3, and omega 3 helps build new neurons and grows the brain (but does not fuel it, only glucose can do that). Cheers - absolutely love your channel.

Do not sharpen a knife over a cutting board you're about to use and don't cut meat with a knife you sharpened without washing it first please! When you sharpen a knife you're essentially filing it down at a microscopic level. So you're going to have metal shavings in your food.
