Hi Ange, you don't have to use the full amount of cheese if you don't want to or it seems like too much and also I suggest using asparagus that's already been cut in the can. It was hard to cut this when dishing out a serving. My best to you and your family!!! God Bless Linda

Hands That Cook the last time I looked, canned asparagus was more expensive than fresh here. Canned asparagus is very good, like canned artichoke hearts. My mom buys it often, when the fresh are too thick and they end up Woody tasty through the entire stalk.

This casserole is good & you can change it up some. You can put shredded cheese in the sauce, you can use a layer of sliced hard boiled eggs between the layers of sauce and asparagus AND you can use cut asparagus instead of whole (I recommend using cut)...I hope you enjoy it!!! God Bless, LInda

Back when I was 13, my mother sent me to Florida to spend a week with her father. His wife, Millie, made an asparagus casserole that was out of this world! I have tried a few that were good, but it was not Millie's casserole. This recipe is most likely the exact same recipe she used, and I am very glad I found it! Thank you!!

Oh wow, Sam's grandma sure knew how to cook one of our favorite vegetables. Mrs Rivet and I just love asparagus. Your cooking of this is so well done Linda! Beautiful sauce out of the microwave. Gotta love crushed saltines for a good old timey recipe! Shredded cheese? Oh yes please! Goodness, that layering was gorgeous. Delightful coming out of the oven all golden and crusty. Sam, your mom sounds like an Angel, running a boarding house like that and helping people. Oh wow, I remember being nabbed by the truant officer trying to skip 8th grade one day. Thanks for sharing! Here in southern New Jersey the asparagus season starts early-usually the end of April- and I am always buying up a lot grown locally and storing it in the freezer to have later on. Wow! What an exceptional casserole, by Rena Mae. It's so great that you made your white sauce in the microwave. This dish would go beautifully with salmon, but I'd serve it with any sort of protein. There are store bought angus burgers in my deep freeze, which I could make like you did the prime rib burger. Delicious 😋 Have a blessed day!

You're right about woody asparagus. That ruins it all for me. The white sauce or béchamel needed seasoning but other than that it's a delicious dish. Next time I will not use so much cheese. In my opinion it didn't need it. The sauce was really enough, with some seasoning and a light sprinkling of cheese. Those prime rib burgers were good and the angus burgers would be too. I wouldn't buy the prime rib burgers again...the taste was good but the texture, even cooking them in a garlic oil on a low heat, was still very, very dry. That ruined it for me. I took a bite and Sam ate all the rest of them (they were huge) LOL!!

Glad to find this. This was one of our family's holiday dishes. The recipe is lost but it did use potato chips instead of crackers.

Hi lauralou1115, Asparagus takes about 10 minutes to bake in the oven with a higher temperature so I don't find any reason why you couldn't use fresh asparagus. Fresh or canned, but I'm sure fresh is tastier, you're going to enjoy this dish. TFW and taking the time to comment. God Bless, Linda

This is a great tasting casserole but use chopped asparagus not the long supposedly tender ones....they are not as tender as the larger asparagus. You'll enjoy this and the simplicity of it! I always add my asparagus liquid back into the dish, as it adds great flavour. Instead of using milk, I just mix in some milk powder to my asparagus liquid and add it back to the dish. Seasonings I like adding are mustard, lemon, black pepper, touch garlic, parsley, optional origanum and then of course not forgetting the grilled cheese topping. Thank you for uploading.

This is absolutely delicious just as it was written and I wouldn't change anything about it. Everyone can make their asparagus casseroles anyway they want to and I'm sure they're delicious...This is Sam's grandmothers recipe and I love it just the way it was written. Hey, I just now saw this and my MIL is in hospice and can't eat anything solid, so we're trying to clean out her freezers and stuff and she had a bag of frozen asparagus. I thought I'd make this with it. Should I just thaw it in a strainer before I put it in the casserole, or would you recommend steaming it a bit first?

Hi, the asparagus will cook in the casserole but it wouldn't hurt to steam it a bit first...and cut it up before putting it in the mixture to bake. TFW God bless
