Just as a side, as a married couple with kids how laid back approachable and inspirational for your kids you both are is absolutely fantastic as you both embrace the latest trends with having your channel but still keep the right family values, it's one of the only channels i let my twin boys watch as i lost my partner 2 years ago to cancer and being a single dad im trying to show them a happy medium woth the time they spend online. James just to throw a spanner into your Christmas ham recipe. Substitute the water for coca cola. Not pepsi or any other store home brand cola's. Has to be original coca cola. Let it steep in the coke an hour or so before putting on the gas burner to simmer. Then when it's ready, let it rest in the cooked cola juices for half an hour or longer. Then lift out, glaze away and roast. Add a wee bit of Thai five spice with your honey glaze and everything else. Gives it like a cola fizz effect when it's done. Just my way of perfecting it after 15 or more years of doing "The Ham!" I do mine Christmas Eve night. A few drinks while everything basically cooks itself.

ive used the mrc powders in the red tubs and I sprinkled a fair bit in a bag and then tumbled the meat in the bag to cover all of it I think I let it marinade for a while too seems to soak it up good ,all yours looked awesome anyway merry Christmas to u all

Top tip always leave the dry rub on the joint of meat 🍖 for a least a couple of hours or overnight to allow the marinade to soak into the meat. Enjoy your content mate.

Cup of brown sugar at the bottom of your slow cooker. Put your gammon on top and then another cup of brown sugar over the top of the gammon. 4-6 hours on high.The sugar when absorbing into the ham with the salt and juices that come off it make a natural sticky glaze you can baste it with every now and then during the cooking. Then use the juices at end in your gravy. It's simple and superb.

With the smoker/grill it does drop in temp when you open and close and have something in there especially if it's windy out best bet it to leave it don't open let temp come up and slow cook or crank up the heat a bit

James, I also did a ham trial run at the weekend. I soaked my ham for 24 hours before boiling it. I changed the water with fresh every 8 hours. It ensures the ham isn't salty. The boiling does alot of that, and it may be unnecessary, but guarantees a not too salty ham. #HamFriends

mustard, spices, dry rub, traeger, then in the last last half hour glaze so it doesnt burn :) but if you want to boil it first 50/50 water and cider pre heat traeger with bricks covered in foil then when you open to put the ham in the bricks retain the heat and your cooking again at temp in no time with no stall :)

Alright, I'm a Canadian and I need to let James know this. In case you were unaware, Canada had a vaulted supply of maple syrup just in case we have a shortage. Zero joke. As for if it's a good brand (I've never seen it in Canada, but most brands don't actually exist in Canada because we in Ontario can buy right from a maple syrup farm) it's easy enough to tell if it's good by looking at the ingredients.

Understand about the upset watching Paisley, we had a Rottie cross with an English Mastiff (a Mastweiller named Killi ), but she passed in 2022 during covid, only 1 of us could be with her and even sometimes now when we get memories showing on FB and stuff it still melts us. We decided not to get another dog as we are both not in good health but also over 60 so too much work, make do with the 4 grand kids instead lol. New to your content but been binging it as love you both (Especially Clare being a fellow Scot)

Cross cut the ham prior to seasoning and it will let the flavour infuse.

U need to try cooking the ham in a slow cooker over night in coke, it takes all the salt away and the juices left over make the best gravy. Half an hour before you’re ready to eat it cover it in honey or maple syrup and whack it in the oven. There’s loads of videos on here on how to do it. I will say though u need a large slow cooker like a 6 litre one and use enough coke to just cover the ham xx
