That green banana leaf wrapped savoury fish blended paste is called Otak-otak and it’s a dish of Malay and Peranakan (Straits-born Chinese) origins. It’s commonly served with a local Malay community origins dish called Nasi Lemak as part of a meal or eaten as a treat. In Singapore, Otak-otak is typically made from Spanish mackerel or ikan tenggiri. There are regional variations of both these dishes.

@@ATrainTravels Generally in this region we just label the different races of food as Chinese, Malay or Indian food. We don't usually label a country to it unless it is specifically from that country for example. Though technically rendang was from Indonesia, it is essentially a Malay dish as it is available in Indonesia, Singapore and Malaysia.

Singapore native people, are the Malays. Singapore's national language is Malay, while we all speak English as our first. So, Singapore is a Malay land in all accurate historical roots, but we are an independent, multiple cultural metropolis since leaving (or rather being kicked out of) Malaysia.@@ATrainTravels

Then again, Singapore doesn't claim ownership either since otak-otak is widely recognized to have originated from Sumatra (specifically Palembang). At best, call it Malayan or 'Tanah Melayu' (Malay Lands) cuisine, although otak-otak is also a popular street food in Indonesia, Brunei & the Philippines.

Welcome to Singapore. Seems like you're coming to Singapore to eat Malaysian/Indonesian food. Btw, fyi, the Bak Kut Teh (pork rib soup) which u ate at Marina Bay Sands Food court is Malaysian version (Dark colored with chinese medicial herbs). Singapore's version comes in clear white peppery soup base which originated from the Teochew dialect group in the early days. Here are few better known Singapore's peppery based BKT resturants for your info ... Founder BKT, Ng Ah Sio BKT, Outram Ya Hua BKT, Songfa BKT. We do also have a dark colored version which originated from the local hokkien dialect group, however, they are quite rare to find nowadays.

Otak-otak is NOT fish brains. Yes, otak in Malay means brain, but otak-otak is the name of a dish (fish paste wrapped in banana or coconut leaf and then grilled). In the Malay language, there are many food names formed by the reduplication of ordinary words which have totally different meanings. For example: otak (brain) - otak-otak (grilled fish paste) jemput (to invite) - jemput-jemput (a kind of fried fritters) habuk (dust) - abuk-abuk (traditional kuih containing sago, coconut and palm sugar) getas (fragile) - getas-getas (kuih made from glutinous rice floor and coconut) Of course, there are many other Malay food, kuih or dish names with word reduplication too, e.g. sagon-sagon, epok-epok, ondeh-ondeh, koleh-koleh, botok-botok. However, it is not clear if these words have any different meanings on their own (not reduplicated).

Sorry to inform…. That dish at MBS was not Bak Kut Teh (pork ribs soup) 😅 I believe what you had might be the Dry Bak Kut Teh (usually spicy soy sauce, non-broth version). If you are coming to Singapore again in the future, you can try Bak Kut Teh @ Song Fa (Pepper Soup Style) / Block 19 Marsiling (Herbal Soup Style).

Good video! I'm glad you and your mother totally enjoyed it. If you're ever back to Singapore, please go outside the city and visit seriously good food that's also much cheaper. Bak Kut Teh can cost only less than $10 whereas your nasi lemak will set you back by only less than $8.

Bak kut teh, the teh part... the right way to eat is to have chinese tea accompanied where you can find in other parts of Singapore 😊... Singapore bak kut teh is more of the white peppery soup whereas Malaysia version is more of the black herbal soup. Nasi lemak is part of malay cuisine, not necessarily Malaysian food. Any countries where there are malays, you can find nasi lemak. Your choice of cultural background music for the Singapore vlogs is interesting though. 😅 If you want to experience actual wildlife in Singapore, you can go to the Sungei Buloh Wetland Reserve. 😊 100plus is a drink created & launched by F&N in both Singapore & Malaysia.

Sadly Singapore’s attractions are all man made.. it’s not going to last. Constant changes with tax payers money and increasingly expensive… definitely the SIN city of Asia. Food sucks due to foreign cooks and even locals are losing interest in keeping it authentic anymore…compared to neighbouring country and much more pricey. There is nothing in Singapore worth spending on unless you’re converting from UK or US don’t bother about this country that is just fake in every possible way.
