Tho this might be the scientific way to theorize what happened to brok. It has been part of the norse mythology that brok was stung by Loki (Atreus) as a scorpion while he was in the process of making Thor's hammer handle. That is also the reason why the handle of mjolnir is very short. He also had to drink a lot of vanir? or aesir? (ill have to look for that one again) booze/medicine to prevent the poison from killing him making him blue.

If you hold onto something while sweating, the sweat could combine with some surface level fragments of the material you work with and introduce a few molecules of it to your body if it gets absorbed back in. Assuming Brok and Sindri have been smithing their whole lives and are both very old at this point, he's probably held enough raw material throughout his life to dye his whole body blue. It was probably gradual and fainter early on but at this point, it would make sense he'd be that blue and all over his body.

Fun fact: early in the game, if Atreus asks Sindri why Brok's skin blue, Kratos says "Boy!" In a strict manner. Whereas in the later game, Kratos says it in a kinder tone and says it like it's quite insensitive to ask him that.
