Chef Joel, I watched this video yesterday and I made your Mashed Potato Cakes last night... I followed each step until it was time to put them in the oven... Instead, l popped the tray in the freezer and once they were frozen, I wrap them individually. The “MPC” only took about 12 to 15 minutes to defrost sitting on the kitchen counter. I baked my “MPC” in my Toaster Over at your recommended temperature and just a couple of minutes longer... I doubled your recipe and I now have Breakfast for at least a month. Unless my Grandkids sleep over... l really hope they do! Seriously, you’re the most talented chef on the Internet! I’ve yet to see you make something that didn’t want to try. I cooked this beautiful and simple dish yesterday. However, I halved the amount and made a salad with green beans, red onions and a classic Vinnaigrette. It tastes really good and I can recommend it.

...I made these and they taste incredible - the only issue is cook time. After about 20 minutes, I turned on the Broiler to crisp them up, but you need to watch they don't ignite:)

Joel my good Aussie friend, very nice recipe, i'm irish , you know that, so i'm going to make these, & yes the stereotype is true, we irish like our taters,lol, i eat them appx. 280-300 out of 365 days a year in some form, baked, fried, roasted, etc..., the other days are rice or pasta. I usually make regular mashed taters for a supper, make enough for leftovers so i can make all types of tater cakes like yours the next day , this one is new to me & some i bake, some i fry in bacon fat in a cast iron skillet. Do not change a thing on your recipe, in my opinion, looks delicious. ( btw, i had a hard time finding those metal rings used for tater cakes, eggs, etc... so i made my own. Used canned tuna for tuna salad, cut off the bottom of the can with can opener, soaked off the labels & i have rings for taters, eggs, etc...lol, i did mention i'm a hillbilly, lol, cheers mate !

I just tried this with left over instant mash. They splayed out like a cookie dough would; maybe I should have let them set up a bit after they came out before I tried to 'spatula' them off of the parchment paper, but they smell wonderful! I used ground black pepper, turkey lunch meat, a good shredded parmesan cheese, very finely chopped onion (moisture alert!), two egg yolks and then three pepperoni's on top and then more parmesan cheese.

I love making stuff like this and then just freeze most of it, so I can take one whenever I feel like it - even better when the recipe suggests doing that. I already made toaster pasties - just toast (twice for extra crispiness) one for an incredibly fast meal.
