Jamie,I tried it today,my egg plants were homegrown from my garden.I did not have pataks rogan Josh paste but like you am creative, so had left over butter chicken paste! So I used that😊 and I used crushed mixed nuts also some chopped garlic and a pinch of garam masala pinch of salt needed and pinch of red Kashmiri chilli powder As my saucepan has handles that cant go into an oven I opted out the oven finish End result--Perfect,son husband enjoyed it Thanks Jamie 👍👍

Jamie, this was brilliant ! I just made your recipe with two beautiful blackpurplesexy aubergines for two of my vegan friends and we LOVED it!! Addition was a dish of stir fried cauliflower rice, made fragrant with fried chopped onion, garlic, turmeric and a bit of sea salt and freshly ground black pepper. Couldn’t find the rogan josh curry paste, but found a nice brown Thai curry paste as a substitute. Together with the poppadoms it worked a treat 🤩. Love from Cape Town South Africa🥰

I would do this italian style. Add red pepper pesto instead of the Rogan Josh Paste, and basil instead of the coriander. Serve it as a side dish with toasted bread, rubbed with garlic.

Wow! I cooked this and it was divine. I didn't have rogan josh paste so I used Hyderabad red korma. I didn't have pistachio so I used walnuts. So good :-)

Thanks for sharing this easy but wonderful way of preparing eggplant. Of course, I can follow this recipe. But this technique of preparing the eggplant can be used in a variety of ways. Do a French Mediterranean version, an Italian, Turkish, or even Mexican with a green or red Enchilada sauce and sour cream and tortillas!

This is a really nice break down of a classic recipe! Where's my red wine?! It's well interpreted and flipped into something I would rather have! Look at this man; LOOK at his man. Chef work at it's absolute best! There's flow, there's know-how, there's soul, there's just CHEF in every movement and dish! What many can't do and what I keep getting a reminder of every time I look at this man; to be the best chef I can be! :)

Looks tasty. Was that really a (heaped) teaspoon of curry paste as Jamie said or was it actually a tablespoon? 2:33 To me, it looked like the latter. Maybe my eyes are deceiving me? UPDATE: The ingredients list on the website says TWO heaped teaspoons, so I think I was correct. I made it today with korma paste and it was nice. Thanks, Jamie!

Healthy looking dish, no protein there but you don't need to eat it everyday. Pistachios have some but there aren't a lot in this dish from the looks of it. This time, "a little oil" actually means something haha. It looks great at the end, will probably try it out sometime :)

Hi Jamie, I truly hope you read my comment. I've been dealing with Crohn's for several years now and I've tried several specific diets for this condition to no avail. I still get nasty flares. Then I found out I have a mast cell disorder. Basically, many foods have a strong histamine effect on me causing intestinal inflammation. This may be out of your area of expertise but would you put together a few videos on cooking for high histamine disorders? I'm completely STUMPED on breakfast. I was a daily organic oatmeal gal, I loved my bananas, blueberries and strawberries in my hot cereal, they all hurt me.😔. Currently, I'm just eating a baked sweet potato most mornings but it would be so nice to have other items to choose from. Ok, this is a LONG comment. Thank you for even reading this and I understand if you don't address this condition in your videos. Most people have no idea what mast cell disorders are but funny enough, MANY people suffer from it in one form or another but never get an accurate diagnosis. Much ❤ to you. Thank you.
