we call that kiam peng here in the phils. Its a staple among the hokkien people here. Sometimes we would put crabs on top of the rice while steaming and call it crab rice. It is usually paired with fishball soup with pork ribs. Yummy

Hi, it's very hard to give an exact answer for this as quality/brand/age of rice can really affect how much water you need to use. But basically, the most important thing is to not let the rice get too dry while frying, and make sure that there's always moisture for the rice to soak up during the stir frying stage. Once it goes to the steaming stage, the steam will help cook the rice fully. But do make sure to check in at the 10 minute mark to stir the rice so that all the grains of rice can get steamed evenly. If after 20minutes of steaming you feel it's still to dry, you can steam it for a bit longer. i hope this helps! ❤️
