Joe's pancake is more of a UK style pancake rather than crepe or american style. A little too much salt but is yummy with lemon and sugar (traditional way to serve it)

My boyfriend makes pancakes the same way as your gf and they are bomb but can take a while to nail the cooking method. I actually prefer your style pancake to the north american fluffy pancakes. We always serve ours with lemon and sugar :)

When I make boxed pancakes at home, instead of water I use soda (Sprite, Rootbeer, Dr Pepper) It adds fluffy and a subtle sweetness. But you wouldn't know you used soda, like the flavor doesn't carry over

Pro tip: pour your pancake, let the bottom set a bit and then sprinkle the chocolate chips shortly before you're ready to flip it. Best not to inhibite the fluffiness rise by mixing the chips into the batter. :) Also, Mr. "crepe" man, your pan wasn't hot enough. Those things were not fully cooked, buddy. But we'll let it slide because you sang the Adventure Time song.
