A lot of people, even here in Rome, just throw away the egg whites. It's a shame, though. Personally, I either make egg white omelettes or some kind of sweet (a lot of recipes call for egg whites). Meringues for example, which I'm a big fan of, are pretty much entirely made of egg whites. You can store egg whites for a couple of days in the fridge so you don't really have to choose immediately.

If you use bacon and not guanciale (rare outside Italy) you can do this, but guanciale is really fat and it's shame to throw it and use butter

In my experience, you can substitute with pancetta but make sure to adjust your salt accordingly! Pancetta is a bit salty on its own.

@@zigzung5569 Doubt it. It's not effective for cleaning a surface that has previously had raw meat on it, and there is no single solution that can safely sanitize a board with a wipe. If it was by some chance a food-safe spray, he would've already told people what it is. It's almost certainly just a visual trick to cut out cleaning sessions between shots.

I think you mean the amount of ingredients... just multiply it by three and then see if it is too much or you still need more. To find YOUR perfect recipe you need to make the dish a few times and adjust it slightly every single time you make it. Maybe you like more cheese (or less), maybe you like more meat etc.. Me personally, I follow the recipe exactly how it is the first time and usually I make it 2 more times until it is just the way I like it and then I write it into my recipe journal... I hope that helped

One, that was not pancetta lol. B, you can’t with confidence tell if the pasta was hot enough. In fact, you can see steam escaping from the pasta which indicates it hot enough, at least from my phone. Too hot, and the sauce will break. Three, also the bowl may have been preheated in the oven as well. And finally D, why you hating Stop hating my boi haha

That's guanciale, pork cheek. Guanciale (gwan CHAH lay) is an Italian salt-cured meat product prepared from pork jowl or cheeks. It is usually rubbed with just salt and ground black pepper by cooks in Rome, but some producers use other spices, herbs, peperoncino or red pepper, and sometimes garlic. It is cured for three weeks or until it loses approximately 30% of its original weight. Its flavor is stronger than that of other pork products, such as pancetta, and its texture is more delicate. When cooked, the fat typically melts away as shown. If you cannot find it, you can make your own with a hickory smoked jowl rubbed with pepper and salt and allowed to cure in plastic wrap in a refrigerator for one to two weeks. For this application, you can also use a thick cut pepper bacon.
