Discover the rich flavors of Iranian cuisine with this step-by-step recipe for Mung Bean and Chicken Pilaf (Polo Maash). Follow along and learn how to make this traditional dish that combines tender chicken with hearty mung beans and fragrant spices. Perfect for a delicious and wholesome meal.
First, we add a cup of mung beans to a pot and place it on the stove to cook.
Then, we pour water over two cups of rice so that the rice grains soak. Afterwards, we add a spoonful of salt to the mung beans that are cooking.
After the mung beans are cooked, we drain them in a colander to remove the water. Then, we add the soaked rice to a pot of boiling water and also add a spoonful of salt to it.
After 10 minutes, when the rice grains are firm in the center and soft around them, it's time to drain the rice in a colander.
Then, we pour cold water over it to remove the starch. Next, we finely chop one onion and fry it in three tablespoons of oil until golden brown. Once the onions are browned, we add a tablespoon of turmeric and a tablespoon of black pepper to it, and mix well.
Next, we finely chop one onion into circular slices. We grease the bottom of a non-stick container, approximately 30 centimeters in diameter, with a spoonful of oil and add two spoons of saffron. Then, we arrange the onions on the bottom of the container.
Then, we pour three-fourths of the rice and mung bean mixture onto the bottom of the dish, compacting and flattening it. Next, we pour the mixture of chicken on top of the rice.
Then, we pour the remaining one-fourth of the rice and mung bean mixture over the chicken, pressing it down firmly and compacting it. Next, we cover the dish and cook it on the stove: 10 minutes over medium heat and 50 minutes over low heat.
Then, we turn it out onto a serving platter, and our dish is ready to be served.
