Hi Marion! Big fan :) Keen to try this! Small tip: when we use Saffron in any dish, particularly Biryani (which has Middle Eastern roots too) we usually bloom it with Milk and not water, that way you can put the entire thing into the rice. We also soak the rice in water for 10-15mins just to bloom the rice too!

Love that you are using whole spices. I'm in the midst of transitioning from ground species to whole, as you get better flavor. Rice pilaf is definitely an easy weekend meal. I usually broil my chicken separately, but I like the idea of just doing it all in the same pot.

I am Iranian and this recipe is mouthwatering. I am definitely going to try it tonight. Btw I would love to recommend you to try Fesenjān as I see you are also a fan of pomegranate molasses. it is one my go to Iranian dishes on a weekly basis. I prefer it sweet and sour a good mixture of both world. Some part of iran cook it sour and some part cook sweet and in tehran most people at least those who I know prefer it sweet and sour.

I blitz whatever veggies I have (the cheaper the better) so that they are about the same size as the rice grains, cook them until slightly caramelized then add rice. Finish with sumac and/or cumin and coriander powder. Perfect side to many dishes.

We indians add besides cinnamon, cardamom some large Cardamom, cloves, bay leaves to begin with. Some add star anise as well, but I don't like it as it masks all other flavours. This recipe is a bachelor's delight! Marion, I am from food city Calcutta.

If you can get tamarind paste, that is a good substitute because it has a similar sour flavour. But you'll need to add 2 tsp sugar per 1/4 cup of tamarind to give it some sweetness, and also simmer it with a couple of tablespoons of water to give it a syrup consistency.
