Watched the video, and made the tea. The slow, aromatic process made me think of my mom (we're Burmese by descent, not Indian). I already know that I'll almost never rush the process. This recipe brought some nostalgia for how things 'should' be done and how they're done in the kitchens that I grew up in. Thank you for taking the time to walk us through such a special process.

This is what I just told my friend: “I just made masala chai from the raw ingredients: the blackest of black teas, raw ginger, four cardemon seeds, a teaspoon of whole black peppercorn and a teaspoon of cloves, a cinnamon stick, a hacked off block of this brown sugar rock thing that I’ve never seen before - all of this coursely ground in a mortar and pestle and reduced for fifteen minutes in a boiling pot of water and milk. This might be the richest and most delicious drink that I have ever tasted. I can taste the distinct character of each ingredient!”

I completely agree with the need to stock the kitchen with versatile utensils that are not only good for food preparation, but can also aid in self defense should the need arise, which is why I own a large and rather menacing looking molcajete. I had all the ingredients necessary for this chai recipe except for jaggery, so I used Mexican piloncillo instead which is the next best thing considering there are no Indian supermarkets in my city. I am never going back to prepackaged chai teabags. This preparation has become my afternoon ritual once I'm done with work. Thank you for showing us what the good stuff should taste like.

Just made my first ever masala chai following your recipe (as closely as possible). First thoughts was I didn't care for the smell. But the first sip has spices and pepper and that "British Tea" vibe that your nose misses. I knew there was black pepper, but for some reason I didn't expect the kick. I like it. And that's only my first ever chai. Upwards from here I hope with refinements and practice to taste! :)
