This recipe is definitely amazing. Me and my friends don't usually like pickled vegetables. But this one is different!! I can't find dry chilli so I have just used all fresh chilli. It still good. Not too hot. I also used Macadamia instead of candlenuts as I live in Australia. And I skipped the shrimp paste. It's literally delicious!! My picky boyfriend love this! Haha

the term achar/Atchar/ajar( A Form of pickled veggies) seems to be present in many cuisines all the way from indo/malay , pinoy , indian,persian and Some arabian gulf states ( Kuwait, Bahrain, Qatar, UAE) Its really interesting seeing such trivia like culinary similarities between so many cultures ^^.

Usually, after few days of fermentation it gets softer by itself. But you can consider blanching them slightly as well. Becareful to not cook it through, if not your carrots and cucumbers will become mush :)

Thank you for the compliment :) The only way will be to add white vinegar to the achar to mask n reduce the saltiness. If you don't like the smell of white vinegar, apple cider vinegar can be used as well. Adding more vegetables or rinsing is not advised.

@@danii-ellemarie8747 Yup, our chef has tried it out when she made it for her family :) Compared to adding white vinegar, adding apple cider vinegar makes the achar more pleasant tasting without the strong vinegar notes. It will be slightly sweeter as well because of the sugar from fruits :)

Traditionally, there isn't Cauliflowers & Fried Shallots in Nyonya Acar. Vegetables: 1. Pineapple. 2. Long Beans. 3. Cucumber 4. Cabbage. 5. Carrots. Vegetables cutting length too long. Should cut half the size (bite size).

I plan to re-create my mom's achar but I need to be sure of the steps. Upon checking the KZbin, the other videos are either too wet, too oily or too many kinds of spices. This is the closest to how my mom made and sold in Malacca. Thank you for sharing.

How long do you need to cook the rempah for? See most recepies require it to be cooked for at least 30mins?

30 mins is a good gauge! Usually once it comes to a low boil after adding the vinegar mixture, it would be around 20 mins :)

Hey! Do you remember if the NTUC brand has peanuts as well? I remember loving the flavour and texture but it's such a random snack I don't even really remember the core sauce flavours outside of chili and the veggies! I'm hesitant to add sesame and crushed peanuts if it makes it taste completely different, texture wise.

Achar is a fermented type of vegetable so it can keep for veryyyyy long... six months or so. I once bought achar from NTUC supermarket and kept it for even 6 months past it’s use by date and it still tasted so good! 😜👍😆

Well Im not going to say this doesnt look tasty but I have some insight that may lead you down a different path but it takes some context ... I am from Durban South Africa ... in the days of slavery many slaves were brought here to farm sugar cane and since have really entrenched themselves in our culture. A fun fact is that South Africa has the largest amount of Indians in the world (outside of India),As apposed to the Northern Indian cuisine that most people know, we were exposed to the Southern Indians (The Banyas). Obviously when an entire culture is uprooted and put into a new country with limited resource this gives rise to many inventive cooking methods, one of which is a curry which is indigenous to Durban and its aptly called Durban Curry. Im sure there are many who would lay claim to star-dome but Durban Curry is the best curry ion the world ... its made pretty cheaply and there is a very fine art to making it authentically ... even those who are not Indian who try do not get it right. Its steeped in culture and is learned and passed on from mother to child (yes men too) When you taste the Achars that they make you will lose your mind. This is more a "White Boy" achar lol (btw Im a white boy) Even their Breyani is not done normally ... there is no pie crust and it is the rice that steams itself but it is 10 times more flavorful If you ever want to learn .. I mean REALLY learn how to do this right. Book yourself a plane ticket to Durban South Africa, Get a Hotel in Umhlanga Rocks (which is a top area) but find a proper old-school Indian housewife in Chatsworth/Veralum or a similar place (which can be quite dangerous sometimes but well worth it) and sit and watch them. Watch their gatherings ... what the methods ... You will NEVER regret it A fun hybrid dish is called a "Bunny Chow" ... dont worry there is no rabbit in it (it comes from the word Banya), Its a Durban Take out staple using Durban Curry ... they are beyond belief they are so good. PS .. If anyone tries to make it themselves PLEASE PLEASE PLEASE dont try putting clever little chefs twists ... make it authentically or dont make it at all. If you stick to the plan you wont be disappointed.
