Thanks Monica for the Achar recipe. I used to make it when I was living in Germany, a short-cut way. Now living in Sydney, I forgot about it until I found your video, which is comprehensive. I’m Malaysian. I will definitely make it for Christmas , New Year and Chinese NY. What a side dish to go with ham,roast chicken and roast pork !.

I used rice vinegar as rice vinegar is sweeter and more mellow in acidity. Artifical vinegar is more acidic and has a sharper sour flavor. It depends on your preference. All the best and God bless!❤

Hi Jackie. You do not need to blanch the carrots. Just marinade with salt for about half an hour and then squeeze out as much water as possible. This results in very crispy and crunchy carrots. All the best!❤

Hi, thanks for sharing this favorite recipe. Why did you add galangal to your spices? Our ancestors are Peranakans Melaka. We added galangal to the meat only to avoid the meaty smell and didn't add it to our achar. The shrimp paste already gives the Achar an aromatic smell, do we still need the galangal?

@ Many Penang Peranakan add galangal to their spices, either vegetables or meat. The smells are weird to those connoisseurs Peranakan food lovers. This way, it doesn't have the authentic flavor of the food that it represents.

Hi Sharon. This recipe can serve approximately 15 servings. Achar is a condiment which is meant to be enjoyed as a side dish over a period of time. Normally, each serving is about a cup (220ml). However, you can take as much or as little as you wish each time. ❤. Enjoy!

I love your recipe n detailed explanation. This is the 1st recipe that gives the measurement for sugar. Most recipes says "according to taste" which l find difficult to understand since l have not tried making achar before ❤. Also can l just use cucumber, carrots n cabbage to make this achar.

Hi! Please to know that you find this recipe useful! This amount of sugar is meant as a guideline. You can follow this recipe according to what I have given, and then subsequently you can adjust accordingly. Yes! You can use only cucumber, carrots and cabbage. However, please remember that you need to increase the amount of each vegetable to account for the omission of the other vegetables. All the very best!❤

@@kennySg101 Hi Kenny. To keep the achar dry, I squeezed the water out from the cucumber and carrots. I also pat dry the vegetables after blanching. The addition of crushed peanuts also helped to absorb the liquid that leaches out from the veggies.
