Just recently discovered your show, and I LOVE it. I'm a 76 y/o woman. Grew up on a little farm in Pa. I remember butchering days when I was little. I remember souse. I remember liver pudding. We never ate chitling, but since I watched your show, I want some. My dad liked pickled pigs feet- me too. Keep up good shows.

#1 The devil didn't make me cook pork; I did! #2 I can understand and appreciate you religion and beliefs. What do you tell a person that doesn't believe as you do? You will debate with a person that believes your religion is false that theirs is? #3 You seriously believe that the "All Mighty" will forgive you for murder, adultery, stealing and incest if you ask for forgiveness, but will send you to hell for bacon? I am a professional chef and it is a wonderful thing to see the old school traditions still being made and passed along. I just got a whole pigs head for free because the people did not want it. Pig cheeks when cured and smoked make the best bacon (guanciale). I have made many terrines and pates. I also bout a whole pig and nothing was wasted. I have prosciutto hanging that i made along with salami capricola and pancetta You are awsome keep up the great work you make us proud. God bless

My Dad (R.I.P.) used to make this and it was great!! He would make sausage twice a year so he'd make Souse for me to bring back to fam in MD as well

I am so glad that I searched for this. Souse is something that was popular and regular among the older generations in our family. Most of the older generation is gone now and those that do remain never attempted to make Souse. We have family reunions every two(2) years and this year in august we will assemble in Virginia Beach, Va. I am going to make some Souse and take it to reunion. We have had some awesome chefs in our family and this years sponsors want us to try to gather as many recipes of our ancestors as we can to create a Myers Family Cookbook. I'm going to work with your recipe and twerk it until I can get something similar to the taste I remember. Thanks & Be Blessed!!!!! Kevin L. Myers

It's usually easier than you think. Call your local store or meat packer and ask. If they don't have it they can get it for you in couple days.

You can pour the left over liquid in empty mayonnaise jars and freeze them ,they are plastic and won't burst ,then you have ready made stock for gravey,soups and such .You can freeze your made from any thing else this way.

Thank you very much for your "Souse meat, aka hog head cheese recipe" My late Grandmother Betty Calland cooked this for the entire Family, in the Fall season, in the 60's. I haven't ate that since, my Mother and her Sisters, didn't like the process. I'm going to try your version of the recipe during the Christmas Break-2024. Chow :)

I loved your video. My Grandmother had a hog farm in Alabama when I was a child. I was born in 1950. I remember seeing many hogs heads cooking in a pot. My Grandmother made long narrow sacks made out of cheese cloth to pack her head cheese in. Then it was soaked in vinegar. You just cut thru the cheese cloth and peeled it away. Your's look delicious. I bought some in the grocery store last year. It was horrible. My childhood memory died right there. lol Just to have a taste just one more time.

Brought back memories. My Mom (gone 27 years now) use to make it around holiday time. Me (now 60) have always talked to my sister about making it. Now I am on a mission. My mother used to press the mixture to squeeze out all excess liquids (fat). Once cooled overnight in our pantry, you couldn't ask for a better tasting.....Hog Head Cheese! (that's what we, born in Macon, Ga.) always called it!

i love souse. bit its hard to find in michigan. my great aunt n my mother in law make head cheese.same thing but no vinegar or heat ,just lots of garlic . i make head cheese all the time.i use pigs feet n add some pork.i like it junkie as we call it . but my husband likes it not to much junk n more meat.and we do it in a 9x13 dish and add more liquid . so it has a thick layer of gel on top .then we cut it put it on a plate n eat it with vinegar poured over it or just horseradish. its the bomb.ty

I really want to thank you for this video! I know i'm a few years late seeing this but WOW! I lost my Gramma "BOOBEE" some few years ago and she always made this for me and I loved it, I never did have her show me how to make it (to busy eating it i guess)and I tried it once on my own,, it was a waist of everything. I came out head soup, never knew about the trotters being added. I will try this again in honor to her! Thank you soooo much.

Great video! My people are from Rome, Georgia and we love head cheese. There is a little market here in Indianapolis on 30th and Mass avenue called Chucks. They have the best I've tasted here. Wish I could get some of that homemade though. Thanks for sharing.

Very helpful ma man,I live in New Orleans and my buddy and I got a wild Russian boar(he killed it!) I kept the head,took a torch it to get rid of all hair,taking out the brine today,cooking it tonight....hope it turns out as good as yours,first time too,excited!!!

Had to "Subscribe Daddy", I'm a self- trained chef! "Louisiana born and bred Diva, your recipes are close enough compliment us in almost mirror images of our Louisiana Creole & Cajun Heritage! Just Discovered you! I"m always willing to learn! We make 'hog head cheese out here, matter of fact I just finished smoking neckbone, turkey legs, chicken, and even veggies for gumbo's , dried beans, greens, soups etc! As a head and executive chef for many restaurant's big named companies ! I'm now self employed and cooking only foods that I enjoy and making a living from it so ! Do what you enjoy !

Your head cheese looked great! I wish I could make hog head cheese but I'm disabled and can't handle heavy bulky stuff anymore. I make something I call T 'n T ... tongue and trotters. It a terrine that tastes very similar and is easy to manage for someone like me. I sure enjoy your videos. Keep up the great work!

Great video I am cooking my head cheese as we speak my mother made it every year around Thanksgiving or Christmas and I was a chef for over 30 years and I am very familiar with this recipe and now my mom has passed away and I am keeping in tradition I just want to say you nailed it great video.

I'm from the south as well. My Dad used to make this. When I was younger we used to butcher hogs in the field. My dad would roll the hog in a drum of boiling water and I would help pull the hair. Looking back it's disgusting. However it brings back fond memories of my dad. Anyway I think you are awesome for making this video. It's like a classic that many people would never get. Thanks :)

I saw whole hog heads in walmart Reno Nevada for about $13.00. Wife wouldn't let me buy one but I am going to when she ain't with me !!

sneakeey1 I had a chance to be a chef's assistant in Paris for five months to finish a short-term contract someone hadn't. I jumped on it -- normally you need two years of college to even approach such a job in France, even waiting tables. I learned how the chef ran the business, kept the books, hunted down the products and used some local subcontractors. She had a vile temper but her dishes tasted fine and the presentation was so pretty. I enjoyed doing everything extra, cleaning and helping, serving, taking orders, and running the coffee and beer bar Wednesday afternoons. I was a short order cook in the US so not afraid to be hands on and I know things have to be cleaned CONSTANTLY. Someone has to do it, ha ha! :)

I subscribed to you -- I'm American, have been in France 19 years, studied in Italy -- wow did I learn some cooking there! This is a good method I've decided to try. And, I'm attempting to document it. I do two YT channels and Dailymotion and people seem to like my crude but authentic cooking clips of "real French food." You are great!

I make this once a year, usually around this time of the year because that is when my Mom made it when she was still here with us. My Mom used the head and feet. I am not brave enough to do the head so I use the feet, ears, snoot and ham hocks. The carrots and celery are a different touch for me. I use onions, garlic, sage, salt, red pepper flakes, parsley, and black pepper. Yours did look good and I trust it tasted good.

I hate to admit it, but I do this for DH sometimes, after we get a hog butchered. This looks lovely, and you do a great job! Also, the tongue is very good by itself, cooks just like a pot roast (beef tongue too).

I LOVE this man! My grandparents were German, and they made this there, as well. They also called it Souse. I'm going to local latino grocery right now, to buy everything. Gonna make it for my Filipino friends for Christmas Eve. They love everything pork!

Man i have come to KZbin to find recipes for all types of dishes but being a southerner i never and i do mean never thought i would see someone make homemade "hog head cheese". We used to sell commercially made souse in our small family run grocery store here in small town southern Minnesota, and I loved it. Believe it or not people of Scandanavian and German extract also love souse. I suspect your homemade souse is even better.

I wish i was there to try that damn it looks good, my grandpa would always make souse and i loved it. I havent had it in over 10 years thanks for making the video ill be making some this weekend now that i know how.

Here in Ohio we butcher hogs as a family in the winter. We use every part of the hog we can. We make this and call it head cheese. We do ours all outside in a cast iron kettle over a fire. As a child I loved it but not so much now because of eating it so much as a child.

Have not had any hog head cheese in 38 yrs. The last time a friend of mine made some and it was fantastic. Initially I thought I would not like it, but I was pleasantly surprised. My friend also cooked some BBQ mountain oysters. The taste was off the chain. My friend also made his own BBQ sauce, which had a nice kick to it. I was not told what mountain oysters were until I had eaten about 3 of them (LOL) Have you ever tried cooking BBQ mountain oysters?

Great video ...Laid back .....the key to this recipe as well as making scrapple is to let the liquid reduce by about half after removing the meat !!!

Ah, my mother regretted not getting her maternal grandma's pickle recipe. It took her a long time to find an elderly person to re-teach her. Secret? A slice of rye bread in the bottom of the crock! Go figure. She did get really good at it. Now I make pickles cuz France has great mustard but lousy pickles! (I'm from Ohio and the mother's side is Slovenian, the father's Pennsy Dutch.) My best to you, and it's a shame when we lose the cool ones!

Uprated. Just got me a pig head in the market here in Saint-Denis, France. Fresh, 8 euros eighty eurocents. Just cleaned it in cold vinegar (white) water for 10 minutes and inspected it. I'm a bit intimidated, but thanks to videos such as yours, I'm trying this! Pork is a staple food here in France.
