it's a combination between Soapwort Juice(çöğen) and sugar. If you live in Turkey, that should be easy to find, but as for foreigners, I'd try egg whites instead.

From my experiment, the amount of sugar has to be more than cornstarch 10 to 1 in order to give it a chewy texture and more months to expire or being molded. Maybe 6 cups of sugar requires you only one and a half cup of cornstarch. Not sure about the amount of water. As for white stuff they use, it's a combination between Soapwort Juice(çöğen) and sugar as you can see in the video. You need a mixer for that step. Instead of that due to rarity, I'd rather use egg whites like making nougat/Torrone, at the expense of being a vegan sweet.

@@ayabenhim9226 Good question, and thank you for asking. From my own experience, sweet is good, if it comes with chewy texture. Not adding excess amount of cornstarch is how to create a chewy texture like gummies or Japanese mochi, and how to extend its lifespan. Rahat Lokum was made to be very sweet anyway, from every time I had my intended results, or when I bought from others to compare with mine. Hazer Baba, for example. Wow, sweet and chewy.
