Just switched from Maya 2018 to Maya 2020 today. At @ 3:15 to 3:28, I think you may have solved the problem I was having with my UV maps in Maya 2020. Saved me some headaches and it should keep my weekly project right on track. Thank goodness for 1/4 playback speed!

Can be done either way, technically it's cheaper to render geo than transparency so it depends a bit on how it will be used.

What did you do in Substance to make the inside of the scroll have texture, instead of being the backside of faces like it was?

The scroll has thickness, therefore there's no backfaces within the inside of the scroll

It seems like he's just creating a transparency map on a blank fill layer. Opacity Map maybe?

Change shader to alpha blending, then add opacity channel, then make fill layer+black mask and draw opacity.
