I'm from Sweden, and my grandmother used to make the exact same patern of slippers. Also, for the fruitflies- try a cup or jar with water mixed with vinegar, a teaspoon of something sweet like sirap or honey, and two-three drops of dishwashing soap. Works as a charm to attract them.

A bannaton helps to control the moisture of the dough surface. Any natural fiber basket lined with a tightly woven towel will do the trick. Plastic, glass, silicon do not absorb the trace amounts of moister from the skin. The lame is a very thin sharp blade that allows you to score the tightened skin of the loaf to control where the rise happens. The light on in the oven provides a warm rising chamber. In your half size oven. Heat a glass pan on the lowest setting. Place the stuff needing to rise inside but not directly on the own (folded towel is enough), close the door and cover with a folded bath towel. Those ovens are great but they don't hold heat. I've used one for years. You can use a heating pad too. In the bakery put one between two sheet pans and set on low. A full speed rack like you have take 4 of these set ups to keep my bulk rises going in our Pac NW cool times. Have fun!

Some of my best sourdough memories as a kid was when we would take a road trip to San Francisco and get fresh sourdough at the wharf with a half stick of fresh butter. Then we would go to the beach and have bread and butter with a cup of milk and watch the waves. The water was way too cold to play in. Fun times.

Giselle! I love keeping starters- it is usually not recommended to keep them in glass or tight lids. As the starter bubbles and creates gas it raises the pressure in the container. The container can burst and if it does not burst- the pressure can hinder the starter growth! Best of luck!

Would you like a Texas tip, for catching fruit flys. In a jar or cup, like you had, pour in two parts apple cider vinegar, one part water, one or two teaspoons of water. Stir mixture to dissolve the sugar, does not have to be totally dissolved. Now squirt a bit of dish soap into mixture, mix lightly. cover the top of the cup or jar with aluminum foil, poke about five to six holes in the foil. The smell will draw in the flies, the dish soap will drag them in, and the top will trap them in the container.

Beautiful videos. I'm confused about the sourdough though. I've been growing a starter too and I thought the airborne yeast was how starter grows. You were putting a metal lid on instead of the cloth cover on. Metal blocks the airborne yeast while cloth allows air flow. At least that is what I've read!

I believe the oven light was to provide just a bit of warmth to aid in rising. My oven doesn’t do that either so I will turn it on and when it BARELY starts warming I turn it off. If the racks are too warm I put a pot holder down and set my bowl on it, close the door and let it rise. I am interested in the GF baking as I have family who are celiac. Best, TeresaSue
