Azula is one of the best villains you'll ever see in any genre. She is everything Zhao wishes he could have been. She is merciless, intelligent, conniving, intimidating, highly skilled, ruthless, and she believes in her cause. She will do absolutely anything to please daddy and support the Fire Nation.

And most importantly, she is effective. Zhao was a narcissist that refused to see his own short comings and weaknesses for fear of looking weak. Azula is pure offense 24/7 which helps shield people from discovering her weaknesses.

The reason the intros didn’t change is because kids would not follow the show linearly, so if you pick it up s2 ep1, you’ll know now who the avatar is and his story for the next half hour
