You neglected to mention that Strange signalling to Tony that this was indeed the timeline they win was immediately preceded by Thanos removing the Power Stone from the gauntlet and using it with his left hand to deliver a massive punch to Captain Marvel. This was a signal to Tony that the stones weren't permanently affixed to the gauntlet, they could be removed. Tony's nanotech armor made for the perfect way to do it "sleight-of-hand" style, needing only to come into contact with the gauntlet for a fraction of a second to swipe all the stones at once.

But what stone would he take Time Stone: Thanos would use the space stone to bring him back. Space Stone: Thanos would rewind time. Reality Stone: Thanos Would do either one from above. Power Stone: Same thing from above. Mind Stone: Thanos would do the same. Soul Stone: Same thing. So he would have to get three stones like the time, space, and power (to take away the power he would use it for).
