Avocado Pasta🥑

Spicy Avocado Pasta
Cavatappi or pasta of choice
1 shallot
2 garlic cloves
2 avocados
1/2- 1 lemon, juiced
1/4 cup fresh basil
1/2-1 cup reserved pasta water
2 tbs olive oil, divided
1/2 tsp chili flakes
Grated Parmesan cheese
S&P to taste
💗Cook pasta according to package directions. Save some pasta water.
💗Heat 1 tbs olive oil over medium heat. Toast shallot & garlic. Add to blender with avocados, basil, lemon juice, S&P, & Parmesan cheese & blend until smooth.
💗Heat remaining oil over medium heat. Add chili flakes & toast for 1 min. Lower heat & add sauce cooking for 2 min. Add pasta & mix well.
💗Garnish with Parmesan cheese & basil if desired. Enjoy!
