Nintendo should definitely bring back Galaxy Colosseum. It has good music, nice visuals and uses an extremely underappreciated Galaxy enemy.

Dry Bowser is just nasty, using fireballs that act as attacks AND shield from your shells, and even using stars to catch up immediately after being left behind.

Yes, indeed it has. The first time it had bosses was in Mario Kart DS's mission mode. Then Mario kart Wii's online tournaments, a series of weekly, online exclusive missions, introduced the bosses shown in this video. Although the mode is no longer available due to the lack of online play on the Wii now, this mod, tournament museum, restores every single mission from that online mode, bosses included.
