Hello!! My Name is chef Deena from the popular Adupangarai show in Jaya TV Viewers must have seen me in Zee Tamil shows as well. My Culinary journey as a trainee to become an Executive Chef is incredible. My experience in the culinary field is for more than fifteen years and my USP is Indian cooking !! Apart from being a TV cookery host, my experience lies mainly with being employed in some of the major star hotels across the country especially the Marriott group.

We make this sambar regularly in our homes. We also make one with karamani, pooshanikka, Chena kezhangu etc. Called poricha kozhambu which is again a classic recipe.

Fantastic recipe. Deena ji, your humility is astounding. You prompt the cook to give both the religious and scientific reason for a particular ingredient - like back chana, castor oil for cooking toor dhall, use of solid type asafoetida (not powder), combining white pumpkin & capsicum etc. Normally moong dhall is not used during auspicious occasions. Lots of fine details given by Thangam mami. Thanks Deena ji.

Pranams to you🙏 And you beautifully brought out everything in the recipe Pranams to Thangam Mami🙏🙏 What a recipe, thank you, Mami The reason we have been told for not using onion, garlic, and vegetable like radish, drum stick, bottle gourd (surakkai) and a few others is, these vegetable have rajasik gunam. And we have been told to avoid rajasik and taamsik food. In Shrimad Bhagwad Gita adhyay 17, Bhagwan Krishna classifies food into three categories: satwik, rajasik and taamsik. And HE explains to Arjun how food affects a man's nature.

I am a 70 years old woman a fan of your. I have been following your lessons they are scientific and rational. I remember my mother preparing this sambar. She is a MARATHI woman from tanjavoor. But she grinded coconut separately... thanks sir once again.

Madam is right. .. thich pull is used for sambar and the next for rasam we used the residue tamarind for the chutney. In this way we economised Still we do not use onions in many traditional recipes. .

Wow what a beautiful preparation. I would like to try with the black channa and also without it.some variations which I like to try is to add potatoes. Nice to have recipes without onion and tomatoes as normally we use them for making sambar.thanks chef and மாமி. Great sambar and great தமிழ்.

In our side tanjore Salem side we add very little dhania and kadala paruppu. And never add jeeragam. We make pulioothi kootu. In that we add kondakadalai
