Ingredients:
· Raw Rice - 1 cup or rice flour - 1 ½ cup
· Black urad dhal (with skin) - 1/3 cup
· Dried ginger/ Chukku - 1′′ piece coarsely pounded
· Black pepper whole - 1 tsp
· Cumin seeds/ Jeera - 1 tsp
· Curry leaves - 2 sprigs
· Asafoetida -1 tsp
· Ghee - 2 tbsp
· Oil - 2 tbsp
Method:
1. Wash rice and soak in water for 2 hours. Drain the rice, dry and pound to a fine powder
2. Wash black urad dhal with skin and soak in water for 4 hours. Drain and grind to a smooth batter without adding too much water
3. Add pounded rice powder to the batter and mix well to a thick consistency.
4. Batter must not be too thick but not like dough either. If you think too much, sprinkle very little water.
5. Add the salt, dried ginger, cumin seeds, curry leaves, pepper, asafoetida powder
6. Mix well and set aside for 2 hours
7. Use a heavy dosai plate or tava (preferably made with iron). Pour some ghee and oil mixture onto the dosai tava and heat. When oil is hot, pour the batter and spread like a dosai.
8. Pour more ghee-oil mixture and fry on both sides till golden brown.
9. Once the edges brown flip and cook the other side.
10. Serve hot as is or with milagaai podi / idly podi.

A great treat for all maduraians anna. Enga Alagar ga evlo pidikumo....avlo indha Alagar kovil dosaiyum pidikum.... But whatever you try....we can't get the same taste bcos... It is made using panchaloga dosakal. That is the main secret of this recipe. They are selling this prasadham for rs. 50 or rs. 60... And if you get it very hot from the kitchen you are very lucky

My roots are from a village close to Alagarkovil. It’s true that the theertham is pure mineral water. Plain water tastes heavenly. Even now it’s great taste, but it was much tastier when I recall my childhood summer vacations!!!

So happy to see this kovil dosa from Madurai, I grew up eating a similar dosa made by my grandmother in Jaffna. I think it had black ulundu, cumin, pepper, a bit of turmeric (this is normal for our dosai mix) not sure if had thalitham too and cooked in sesame oil and illupam oil mix. we were lucky sometimes to have two each. We called it 'kuththi' dosai.

When we went to Srirangam, we received a prasadam that was like a cake. Not as sweet, but spongy, a bit crisp on the base, about 5"-7" in diameter. It was heavenly. But I do not know the name, and could not get it in subsequent visits. Would be great to know the name and recipe if possible. Thanks in advance
