I cooked it yesterday in my version with small bacon cubes. It tastes really very, very good and I can recommend it to everyone to try. I did a few little things differently. First, I cut the amount in half. That was enough for my wife and me for 2 dinners. For the potatoes I used a potato ricer for a finer consistency. In addition, I seasoned with nutmeg. I replaced the mozzarella with grated Emmental.

These look far superior though, I find corned beef and onion on its own a bit intense, but these with the potato pancake and mozzarella seem made for me. Oh my son would love these. Last time I went to stay with him he asked me to make some potato scones or farls whatever you call them and he got stuck right into them. He hid them from his kids so that they couldn’t get any of them so I know he’ll love these. I guess I’ll make him some when I go to his place just after Christmas.
