Here is a little tip i learned in school. Roll pastry out then cut a quarter of it out to make a pac man mouth type shape then place cone shaped pastry in greased pudding bowl and bring edges together and seal together then use the cut out pastry to make your lid …. Magic ❤️👍🏼

My Yellow-Belly mother learned how to cook this from her husband's mother after they moved to the North East upon marriage. Mum cooked it every Saturday thereafter for dinner (lunch) along with chips and baked beans. She used leeks instead of potatoes and onions, though, probably because of how she served it with chips. My word it tasted fantastic! The scent of the gravy as it softened the crunchy chips will live with me until the day I die. It's a fabulous dish and so adaptable. I'm sure there are as many variations as there are Mackem and Geordie grandmothers and they are all equally valid.

I tried doing the Suet pudding (my first time), and was freaking out. I’m no baker, giggle. I’m subscribing to your channel after watching you in a few of your videos, and watching you with this suet recipe! I didn’t know to add butter to flour. I used small tins from Mom, did the parchment & tin foil for steaming. They turned out pretty good. I’ll be making a bigger one this week for my Dad (88 yrs old from Lancashire), who hasn’t had a Steak pudding in more than 20 yrs. I did the stewing beef, onions & carrots ahead of time, but the suet steaming still took 2 hrs. Pretty proud of my results, forgot to butter the tins, but still worked out well. Rookie mistake. I love anything with a suet crust. I started cooking aged 8 and the first time I made a pudding in a basin I got the beef and suet from the butcher, and minced the suet with a war-time Spong mincer. The crust was incredible with a golden crust. Was never able to make it the same with packet suet. This takes me back to when if you wanted it, you made it. No processed food.

Sad there are no coockery lessons at school these days. We learned how to make suet pastry from scratch.( using actual chopped suet) I love suet pudding sweet or savoury and using butter is even suitable for vegetarians. I've just discovered your channel and love all the traditional British recipes as I am a fan of regional cookery. Really love the suet corn beef hash pudding, I fancy trying it with corned mutton and a minty gravy. Great inspiration. PS one regional recipe which is a good winter filler is Black Country Groaty Pudding, also known as Groaty Dick. It's a fantastic slow cooker meal and can be adapted easily to give a huge variety from the original basic recipe. I'm sure you would be able to give it your own treatment just like the traditional Black Country recipe was varied by every housewife!

I frequently make a steak and kidney pudding ( it takes5 hours to steam as the meat is floured,seasoned, and put into the pudding raw. I may very well try this out, as I like corned beef hash as well. A bit of Henderson relish on it 😊

I was taught to make hashed potatoes (for hash browns or meat hash) without parboiling the potatoes first. Dice the potatoes as you did and fry in a little fat, turning to prevent too much crisping or burning, then add a quarter cup of water or so, turn down the heat and put a lid on the pan to let the steam finish cooking the potatoes through. While they’re cooking use the time to prep whatever else you need for the meal. Since you steamed everything after you don’t need to steam them in the pan. The fat would be hot from just cooking the onion until it was slightly translucent and they would be nearly caramelized by the time the potatoes were done. Saves dirtying a pot to boil the potatoes. Being an American I’ve never made anything like that style of pudding- it’s just not a thing here. I may have to give it a try but I’m not certain that I’ll be able to keep myself from putting it in the oven after taking it out of the mold to give that pastry a little color in the manner of a pot pie. Would that be sacreligious?
