- For the Dough:
- 250g self-raising flour

- A pinch of salt
-Milk wash
- For the Filling:
- 300g bacon bits or 8 rashers of bacon, chopped
- 1 large onion, finely chopped
- Pepper to taste
Oven cook
160 c 320 f - air fryer fan assisted
180 c 350 f - Conventional
50-60 mins

Vegetable Shortening: This is the best alternative for suet, especially for vegetarian options. It can be substituted in a 1:1 ratio for suet. For better results, freeze and grate the shortening before use to replicate suet's consistency.

Amazing, the whole world thinks the Brits only are capable of cooking fish and chips I'm surprised at the traditional menus this cook comes up with, I'm British decent in Australia and these sort of dishes appeals to the Brit in me.

I've actually had a fair number of these dishes as a child in Australia. Sadly, at the age of nine, I moved to the Netherlands, where my parents originally came from, and haven't had them since. I'm a bit of both Aussie and Dutchy😉. I'm glad I found this channel, which will help me to catch up again.

Suet is unobtainable in South Africa, so vegetable suet will have to do! My English grandmother used to make something similar. Now it’s my turn.

Thank you for doing this. It is very nostalgic for me. My lovely Londoner mum made this a couple of times a month during winter time when I was growing up. I was so lucky coming home from school to dinners like this waiting for me. Mum would also add mixed herbs and she used to steam hers in a cloth in her big silver pot lol

@@BackyardChef My Nan used to make this using streaky bacon layered and then she steamed it in a massive pot for about 3-4 hours. One of the best parts was after she cooked it we would have a slice whilst it was hot (yummy) or wait until it cooled down then have a slice. However the really great part was cutting of a slice and then frying it, ooohhh the taste was fantastic. Thank you for reminding me about this, I had forgotten how to make this.

I baked this today. I'm low carb and cannot eat pastry, so I prepared my go-to ersatz "pastry" with Mozzarella and cream cheeses, almond flour, and egg. The Roly Poly was delicious, tastier than the sausage rolls I usually make. Love the recipe.

I just put the bacon rashers and onion in without fryingI thenwrap it in a cloth and boil submerged for a couple of hours.............a much softer presentation. fantastic taste.......and really good fried the following day.

I would use bought Puff Pastry, and add some diced precooked potato to the ingredients to give it more body.

A real favourite from my mum. A bit of sage and it tastes good cold. I used to give a big slice to the butcher in exchange for fresh suet.

So comforting to come home from a hard days' work and spend next to no time in the kitchen cooking up a treat. The onion gravy topped it all of nicely. Can't wait to try the suet pudding mix but I do need to buy a rolling pin. Good form of punishment when the other half's misbehaving too.

@fishnchips2423 I use a empty wine bottle to roll it out, works a treat & if you want to keep the pastry cold, fill it up with ice cold water & roll away

Never had this but I've always loved suet pastry, sweet or savoury Lot easier than a steak and kidney pud (which is heaven on a plate but a few quid these days) and will cost pennies for a ton of flavour, who doesn't look forward to anything rich warm and comforting with plenty of bacon? Midweek joy, this needs making first thing

Ric is this the traditional Bacon clanger? I remember having bacon clanger as a youngster and I think I loved it. I am sure it was made using up bits of boiled gammon- might be wrong it was in the very distant past lol I do however think honk it may have been boiled in a cloth but not entirely sure- memory is a weird thing.

These are like ration book foods or certainly apres WW11 secondary modern “comprehensive “ schools. I don’t remember ever eating this type of stodgy food but can see the value of learning how to do so now for future generations with rising prices.

That looks really delicious Rick but we used to eat something like it at school. It had a sort of pink paste in it and you could sometimes get bits of bone. We used to call it 'Dead man's leg' School dinners eh? hahaha Thanks Rick, take care.

For better results, freeze and grate the shortening before use to replicate suet's consistency. Beef Fat: If you are not vegetarian and can't find suet, beef fat is a great substitute. It's available at butchers and can be used in the same way as suet. Lard: Made from pig fat, lard is another suitable substitute. It is easily available in supermarkets. However, it has a lower melting point than suet, so it may not be ideal for every recipe. Vegetable Suet: If you're looking for a vegetarian option, vegetable suet is a great choice. Another fine recipe that is knew to me and I will take on the challenge to make it. It reminds me when the Leeds lads came over last year and, brought some pork pies over from Wilsons butchers in Crossgates. They bring pies over every year but this year they, brought over pork pies stuffed with pork and black pudding. Not for me it spoils the pie. Some of these lads which I know very well are involved in the food manufacturing and supply business in Leeds.

I'm Lucky, I've made it for so long and do not hesitate to make pies etc - I don't care for all the butter has to be ice cold and all of that - I have made pastry in some very hot places with meted butter. I agree puff pastry has to be cold. There isn't many puff pastry recipes on here - only using bought stock. Do you make your own? Best, Rik

Its too heavy - you can add baking powder and turn the bread flour into a self raising bread flour which would make it lighter in the cook. So it could be done, however not the same results. Best, Rik

I wouldn't, phyllo dough is a very thin, light, and flaky pastry dough, while suet dough is a rich, dense, and moist dough used mainly in traditional British cooking. However the choice is your and it might make for a great recipe. Best, Rik

OK - I was thinking about how to veganize this but went in another direction. Store bought puff pastry (vegan), smoked tofu, onions, and garlic. Certainly not the same but turned out well along the potato mash and mushroom gravy.

@@BackyardChef Mum would make a dish she called Bucks Badger... Bacon bits really big chunks (probably gammon offcuts?) with chopped and sautéed leeks and cubed potato. Wrapped up in greaseproof and a T towel for steaming for hours... Served with Mash and cheesy leek sauce... why not see if you do one? 🙂
