This looks like a refreshing dessert. I don't care for whiskey much because when i was younger and sick with a cold my dad gave me a small amount to drink and told me "It will put hair on your chest:" Being a girl i certainly didn't want hair on my chest.and after that day the Whiskey left a bad taste in my mouth, literally!😂lol I've long since graduated to rum and have been accustomed to rum cakes. And have enjoyed them. Now I'm older so my tastes have changed. And now I'm ready to try Whiskey again in this delightfully yummy dessert you've made. Just like the rum was barely noticeable, i'm sure the whiskey flavor will be subtle. Thanks chef Rik for a new inspiring dessert for me to try.😊❤

Ooooh that’s a family favorite!!! I’m so glad you posted this!! I didn’t know it was called laird. I saw a recipe in Martha Stewart’s magazine around the year 2000. It was called Tipsy Cake. It was on the internet for a while and I’d make it every year for Christmas. I had the foresight to print out the recipe as I don’t have it memorized yet. Then it was taken off the internet. So I’m very glad you’ve posted this so I can try a variation of what I make. Martha’s recipe was sweetened whipped cream on top of layered lady fingers dipped in sherry and spread with raspberry jam. Dollops of pastry cream layered in with fresh raspberries and sliced almonds. I want to try your way! Look awesome.

I keep telling people that our southern banana pudding is nothing but an English trifle put in the oven. It’s literally vanilla wafers (kinda like lady fingers) banana and cream anglaise layered in a casserole dish then baked to slightly brown the meringue topping. That’s it! Maybe I’ll try Scottish Laird this summer when our raspberries come ripe. Cold dessert by then will be a treat.

@@BackyardChef BANANA PUDDING INGREDIENTS Custard: 1 cup sugar 2/3cup AP flour Dash salt Dash of nutmeg 8 eggs yolks 2 cups half n half 2 cups heavy cream 1 tsp vanilla Meringue: 8 egg whites 1 tsp cream of tarter 1/2 cup sugar To assemble the pudding you need: Custard Meringue Nilla Wafers Bananas Instructions: For the pudding: Have a pan of water simmering on the stove. In a pourable bowl or measuring cup, beat together eggs & dairy. Whisk the flour, salt, nutmeg, and sugar together in the top of a double broiler or a metal bowl. Place flour mixture over boiling pot and slowly whisk in egg mixture until smooth. Cook, stirring constantly, 10 to 12 minutes or until thickened. Remove from heat and stir in vanilla. For the meringue: In stand mixer with whisk attachment: place cream of tartar in bowl with egg whites, start slowly and incorporate sugar slowly after egg whites look frothy. Gradually increase speed up to highest and beat until stiff peaks form. Assemble the pudding: Thin layer of custard on bottom of pan. Layer of wafers. Layer of bananas. Layer of custard. Repeat layers as long as ingredients last. Try to finish with custard. Top with meringue. Bake at 350 for 15 to 20 minutes or until meringue is lightly browned. This is a family reunion sized pudding and will need a large casserole dish. Can be made halving all ingredients but following same instructions. Bananas should be ripe enough that they smell up the kitchen. Will need at least a whole 11 oz box wafers and 4 or 5 medium sized bananas for full recipe. Can use any combo of dairy you want, but I wouldn’t go lower fat than all 2% milk.

I wrote this up for a friend so it will have instructions you don’t need. Nilla wafers are a brand of cookie here but if you can’t get that lady fingers will do. We always cut the banana in rounds because the cookies are round but I don’t guess it matters.

Many many years ago I had to make a trifle for a Young Farmers’ club rally competition. I asked my cookery teacher at school what I should do. She said it had to be real egg custard, and no fruit. My Mum couldn’t believe the ‘no fruit’ so I didn’t. The one that won was the one with no fruit. I might add that a true trifle ie Women’s Institute competition standard doesn’t have jelly in it either.

Don't agree that English trifle has gelatine. Proper English trifle is more like you've just done without the whiskey
