im sure part of why you're angry is why i was: a feeling "stuck-ness". I got out of the industry. not suggesting you to do that. But look at how so many career chefs have found happiness- unplug, move out of their environment, go to a rural(ish) place. Cook delicious, well executed cuisine that makes you happy. I did the math, and if I would have saved 2-3 grand a year for 5 years- i could have moved a ton of different places in the US or abroad and opened what i wanted to how i wanted to... you know like the whole 'apartment is a loft above the restaurant space' scenario...
