Hussey! Pellet smokers are a bit of a different beast. If you want smoke, low temp (180ish) for an hour or so, then crank it up to get your desired level of doneness on the outside with desired internal temp. A bit of an adjustment, but take advantage of the easy/no effort temperature change available with the pellet tech.

I do something similar, but I pound two tenderloins to 1/2" thick, wrap them around a package of seasoned cream cheese, then wrap the whole thing in a 2 lb basketweave bacon blanket and cook 250 indirect on my egg until bacon is crisp, takes a while but everythang works in harmony to stay juicy.

We do these all the time on our Grilla Grills Silverbac. I recommend starting it at 225 for smoke then ramp up the temps to 325-350 to crisp up the bacon.

Looked awesome. Try throwing that bacon on the blackstone and fry it almost done before you wrap the tenderloin, works great for smoking.

Great video hussey! I'm a huge smoker. Next Tim try using thin cut baccon. Set your temp down to no more than 250 I like mine about 235. Your bacon will crisp up nicely! Before you put your seasonings on try rubbing it down with a light coat of yellow mustard or olive oil. Also I'm with you at the 145 internal temp. But try getting it to about 143 then pull it and wrap it in foil and set in and empty cooler for about 30 minutes to rest. It will finish cooking, I've checked and it will rise to around 148. The rest is almost as important as your cheerwine! Lol Trust me, give this a try and you will thank me! Keep doing what you ar doing bud! The wife and I love watching your blackstone videos! Try taking it off around 125 and roll it around on a hot Blackstone to sear and crisp up that bacon. I have a Recteq and Blackstone. Use them both on cooks many times. Merry Chrismas, buddy!

I like to put my bacon in the microwave about 90 seconds prior to wrapping the pork tenderloin to give the bacon a head start. This will help the bacon have time to crisp up without overcooking the pork tenderloin

At 300 degrees your not going to get smoke flavor, you should of put a smoke tube in there with it. I’m going to try this out tomorrow like your ideas going to try. So did the dog get a bite ? he was very patients waiting .

For making this you want 225 max temp I personally run 215 on my green mountain when making this bacon crisps up real nice at that temp but it takes about an hour and 50ish minutes to fully cook still looks good though

When you port tenderloin gets done take it out of the smoker an turn your smoker up to 500゚ and stick it in there for 20 minutes it should it will fry bacon up

Looks great Hussey! Try 375 next time. 👌🏼 And also maybe look into getting an A-MAZE-N smoke tube. It gives smoke flavor to food cooked hot and fast. And ramps up smoke flavor in low and slow as well. The smoke tube completely changed my smoking game! Keep putting out great content brother. Check out “Hey Grill Hey” youtube channel. She puts out some great smoking knowledge and delicious looking food as well. You and her are my two favorites to watch on here. Merry Christmas to you and your family! God Bless!!
