Baigan choka, otherwise known as Balanjay choka is a popular breakfast dish in Guyana and Trinidad. The way I prefer to eat it is with a hot paratha roti, but some prefer it with sada roti or fry bake. The eggplant can either be roasted on a grill or open flame on a gas stove, but I decided to roast it in my oven. The taste is great with all of the onions and hot pepper.
Ingredients and Measurements:
2 medium sized eggplants
2 heads of garlic (18-20 cloves of garlic)
4 wiri wiri peppers (use any hot pepper of your choice)
1 small onion sliced
2 scallions sliced
3 tbsp. oil
salt to taste

Hahahaha!!! Who would have thought that a Romanian was going to find a "traditional" Romanian dish on a Guyanese cooking channel??? Of course, the Turkish, the Greek, the Romanians, the ... claim all kinds of dishes to be "theirs", though many cultures came up with the same idea. Though Turkish, Greek, Romanian similarities can be explained by proximity and history...hard to pull that on your recipe being so close to mine. Of course, we use different flavors, but one thing never changes: nothing tastes better than a dish cooked on open wood fire. Congratulations for your clear explanations and great filming. I am going to try more of your recipes, because tasting other cultures is like taking a trip.

When I'm making Baigan, or Tomato Chokha, I put them into a shallow roasting pan, "under the broiler" in my oven, and set the broiler on high; it roast very nicely, and quickly, without any mess, and you don't need foil, or anything. Many times I've roasted the garlic, in the same pan, "at the side" of the Baigan, instead of putting it "inside" the Baigan; I think it's more flavourful this way. My friends used to cook their's, in the oven at 350 and 400 degrees Fahrenheit, when I told them, that I roasted mines, under the broiler, they all started doing it that way.

I love this simple food my Ma used to roast in the fire side the flavour is superb i am cooking it open on my cooker mess every thing up n takes a long time to cook constantly turning n never have the same flavour. Maybe cause Guyanese bigan is naturally grown , mines bought from the Indians shop just force grown. So I will try the tin foil next , So great to see how well u delivered this receipt 👍🏽

This is a great recipe but nothing beats roasting on flame. This does not have that smoke flavor . I roast it on gas stove. Yum

Hey Matthew...u can rub a little oil and NOT wrap it and place under the broiler in your oven ....for about 25 mins ...comes out better...and cooks faster

Another way of making the choka is boiling the eggplant instead of roasting them in the oven- much faster.

Aja B All of thr flavor of the eggplant would be gone and you wouldn't get that roasted taste.
