How to make baigan choka (eggplant dip) using your oven to roast the eggplant as it would be done traditionally over an open flame. Caribbean cookbook author Chris De La Rosa shares his recipe for making choka using egg plant as it's done in Trinidad and Tobago, but he'll be using the broil setting in the indoor oven to roast the eggplant.
For this baigan choka recipe you'll need...
2 med eggplant (about 2-3 lbs)
1/4 teaspoon salt
2 tablespoon olive oil
1 teaspoon veg oil
2 cloves garlic
1 scotch bonnet pepper
1 small onion
* If you didn't already know, baigan is just another name for eggplant. This dish is both vegetarian and gluten free.

Chris I normally make an "x" incision in the eggplant and insert a clove of garlic. When done roasting the garlic is soft and crushes easily and exerts that garlic punch. The additional flavour from the open flame is worth the clean up every time.

Chris, initially I imagined that this was going to be similar to Baba ghanouj (a middle eastern eggplant dip) that I enjoy and have made. I was wrong. This is completely different and it sounds wonderfully interesting with the garlic and pepper! Thank you for sharing this!

Wonderful Chris! Baigan choka (or often called boulanger choke in BG) is my favorite. In fact, I'd rather have a good choka and paratha roti than any other meal on the planet. We add a roasted tomato to the mix as well and sometimes substitute shallots for the onion.

You can add a little bit of lime juice in the end. It's going to taste heavenly, trust me. Thoroughly washed and finely chopped cilantro garnish would work great too. You seem to be a great cook. People living with you must be very lucky to enjoy the bliss of great home food everyday. Best Wishes from India :-)

Hi Chris, recently returned from TnT and was missing the local flavours. With snow all over the place, I tried this recipe and as a "non-cook" it turned out perfectly.....thank God I had some scotch bonnet (grown in St. Catharines) peppers in the freezer, as the roasted pepper was delicious. Between your videos and your cook book which I purchased earlier on" as they say......"ah good to go". Thank You and all the best for 2015!

It will not have the smoked roasted aroma, you will be tasting the flavor of the skin throughout the bigan. Roast it to get the roast taste. I do not like it baked. I tried it in texas bake and it was not nice. Put foil on your stove and roast it. Or you can roast it on a tawa or flat grill but do not do like chris and call it a dip. Stay as you are and keep calling it a dish.

Never had Baigan Choka before; but man! that looks delicious! I can imagine the taste from roasting it on a charcoal grill, Man my neighbors would kill me, lol

The peel is not bitter. We made it in Trinidad all the time ith the peel and tomatoes. Delish!!!! Also the peel gives it more colour. Enjoy and Thanks Chris.

when done in the oven, the peel can be bitter. when roasted on an open fire it's not bitter for some reason.

My mother used to make egg chokha and salt fish chokha which used spring onions as one of the ingredients it tasted very good but I'm not sure how to make it like she did. It someone could present a video that would be excellent. Also have you heard of "marr n bart", I may have the spelling wrong....?

Hi Chris, I love this version of baigan choka. I do have a question tho. When I make it on the stove, I also add a tomato (very messy btw). How can I incorporate a tomato with your version?

Put the tomato in the oven to roast for 5 mins with the pepper and that should do it😊😊

Baigan Choka is one of my favourite breakfast dishes, I love to eat it with a nice hot, hot Sada Roti. Some people also call this Baigan Bharta!!

What if I blend the entire eggplant, skin and all in a food processor? Would it change the texture of the dish? I wouldn't want to throw away the skin.

I am trying to understand why it is called a dip rather than a dish. A dip is dressing or condiment, this is not. The olive was a huge failure because you are not supposed to heat olive oil to the temperature that the oil supposes to reach to chunkay the choka. Plus the olive oil taste does not belong in that dish. The swinging back and forth accent is embarrassing to hear. Learn to pronounce "th'es" if you want to try to sound American. Just some friendly advice if you want to be representing Trinidad and Tobago.
