Really enjoyed everything about this video especially the mom story. I eat sweet potatoes and loath the peeling part. So will utilize that trick. My mom has passed and I am literally terrified to even try to make the sweet potato pie the way she used to. This gave me some hope. I'm going to make this and say its for me (I'm the only vegan in the house) and then let folks try it. I really appreciate your cooking skills and presentation. Remarkably creative recipe! Loved the story about your parents too! I love your precision and presentation of your finished product!. I think this should be made anytime, not just Thanksgiving. Another idea would be to add chocolate to it. I like sweetening with dates or water that has dates soaked in it, i think it is better than maple syrup. This looks amazing !! I love sweet potato… I swap and change them round from regular potatoes. I love them as fries ( in the UK we call them chips) roasted in the oven, done as sweet potato wedges. They’re so versatile, I do a carrot and sweet potato mash, sometimes with Swede or turnip. Love them scalloped ( sliced in a round shape) add lots of peppers and onions and veg in layers and roast in the oven. I’m making myself hungry just talking about them lol !! 😜

this looks amazing. i recommend baking the sweet potatoes whole in their skins. takes about 30-40 mins on 200C (ish, i just throw them in when i am using the oven for anything else). it really caramelises the sweetness.
