I love how you mentioned macarons bc i remember the first time I made them I failed, 2nd time was a success, 3rd time fail, and a 4th time success. From that experience I learned that the French meringue method is the best for making the meringue, make a paste with the egg whites and dry ingredients before folding the meringue, and always make them during the winter season when it’s a cold environment instead of hot and humid during spring/summer unless you’re in a commercial kitchen
