Honey crisp would definitely work! Really any red-ish apple. We used a mix of Envy and Sweet Tango apples.

Hi Josh and Angela! I was wondering...can I make these ahead of time? I wanted to make them for Valentine's Day. But I don't want to attempt to make them during or after I make dinner. So, should I store them in the fridge once they're put together...before baking them?? THANKS!!!

You can make the dough ahead of time, but beignets do not last long once you cook them. Think of them exactly like a donut. Great the first day...not so great the second.

Not too dry with all of the butter and cinnamon/sugar :) But it is a flaky pastry.

They are really best made just before serving. They still will taste good reheated, but they will not be quite as flaky.
