I remember getting it in the 80s. My dad made homemade mac and cheese with it and what he did is melted a big spoonful of butter and put a whole can of evaporated milk where the whole block of cheese and 1 lb of macaroni and it always came out so creamy and delicious. I haven't made it any other way since and it still tastes as good as I remember it except we can't get that cheese anymore so if any of you have an Aldi store in your city or close enough for you to go to one, I say that cheese is the closest to the taste. Nothing is exactly the same but to me that is the best tasting compared to that I can't stand the taste of Velveeta so I will never use that. Thanks for bringing back a great memory of my dad. I miss him dearly. The good Lord has him now and I know he's making him some mac and cheese.

Mmm government cheese ! My mom`s mom used to score us a block from time to time. Grilled cheese sandwiches fried in bacon grease . That was back in the 60`s, it was Much better than today`s crap. I heard it was leftover from WWII ???

Beautiful! I’ve always added an egg or 2 to the milk and stirred well. Then add the cheese. Then baked. Either way it’s good. And that government cheese was great

I like how you shred your own cheese all the pre shredded cheese uses cellulose to stop it from sticking together cellulose is wood fibres, plus it is also cheaper to do it yourself

My husband is in North Carolina this week (from Maine) volunteering for Samaritan's Purse (SP), doing disaster relief work to help clean up after Hurricane Helene. Ive never used flour in baked Mac and cheese. My mother taught me to use evaporated milk and eggs. It’s always very popular and gets devoured. I see flour being used in almost all baked mac n cheese recipes and I’m just wondering…does anyone else use evaporated milk and eggs instead of flour??

Government cheese mac & cheese was the best! There are some food giveaways that give something similar today but it's not quite as good. I made some with it that my MIL received. She agreed it was good but not like the 70s cheese.
