You’ve given me inspiration to try this for Thanksgiving. Every recipe for a homemade mac and cheese that I’ve done over the years, using eggs, evaporated milk, etc turns it into a very dry texture. I want my mac and cheese to come out of the oven more like a custard than a dry casserole. Yours looks perfect.

traditonal American homemade mac & cheese doesn't use eggs or evaporated milk. butter, flour, milk/half & half/cream + shredded cheeses, mix the pasta in, bake in a dish.

This is an excellent recipe. Using an oil while saving the pasta water is the real secret here. You have to balance the stickiness of macaroni with the emulsion of the cheese. Love the work Natasha!!!

real secret? this is how most people make a traditonal mac & cheese, at least in American. personally i use butter in the cooked pasta instead of oil. you're already using butter to coat the casserole dish, so why not a little more!
