I love cottage fries! I've made these for years. Once I slice the potatoes, I put them on a bowl of cold water. Remove them and dry them with paper towels. I then put them in a bowl and drizzle with olive oil and add the salt, pepper and smoked paprika. Put a lid on then shake the bowl. Everything gets coated. I cook for 20 minutes, turn them over then another 20 minutes. Continue doing that until crispy on the outside and fluffy on the inside.

Those look amazing! Like you, I love pretty much anything potatoes. I'd keep and use those ends, though. I'm also a fan of raw potatoes. I would probably have eaten enough to make myself sick when mom made fries or sliced potatoes if she didn't stop me from eating them raw. I also like cold leftover baked potatoes. I think I'm gonna side with Melissa on this one. I'd have gone with some sour cream or ranch dressing, but I'm sure they're great as they are. It's always a great day when we get a video from y'all. Hi Tom and Melissa ! I have learned to use a tabletop mandolin slicer to make waffle style potatoes. I would cut enough waffle style potatoes to feed at least 3-4 people, and then I would apply the spice mix and parmesan cheese. Hope you are having a great day ❤️💯 !!

We will be making ribs tomorrow. This will be our potato dish instead of potato salad. I can't wait to make it and try it!! I think that I will cut up some onion and crumble up some bacon and mix it in some sour cream and top that over the potatoes! Thank you Melissa for mentioning the sour cream!! It opens all sorts of ideas that you can do!! You can even add things like fresh minced garlic and fresh crushed rosemary into the butter and melt it and put that on the potato rounds. Looks like another delicious recipe. You just can't go wrong with potatoes and cheese together. Several years ago my daughter bought me a Cuisinart food processor with all the attachments so that is what I use to slice my potatoes. And it's not difficult to rinse the parts off and put them away.

My mother used to cook potatoes similar to this every year with new potatoes and fresh garden green beans. After I got older I tried it with new and old potatoes and the new one tastes much better I think. But, maybe it is just me. Try with new potatoes sometimes. Many thumbs up guys. God bless you.

I loved this video! It brought back some good memories from my early days of throwing dinner parties. I love to entertain friends and family but I’ve been thinking about cutting back a little due to sky high grocery prices. Instead, I think I’m going back to some of my old recipes from the days when I was young and broke. I use to use crispy potato rounds for few different canapés. Potatoes are economical, taste good hot or at room temperature, and are super versatile with toppers. I also use to use thinly sliced toasted baguette rounds and homemade bagel chips as vehicles for hors d'oeuvres. I stopped using these because, although very economical, I didn’t want to take the time to prepare them. Instead, I bought fancy crackers that are now almost $9 for a not very big package. Ridiculous! Thank you for reminding me of my crispy potato rounds!

Yes again Melissa, a touch of sour cream to off set the richness of the cheese. Tom, I love seeing you sample the foods especially when you offer it to Melissa first. By the way Tom if you rough up the surface of the potatoes ( like scraping with a fork ) you will achieve an even crispier result.
