I am so happy to see your recipe. I'm 70 years old. My mom used to make Swiss steak with gravy when I was a kid. I couldn't find her recipe since she hadn't made it since I was about 10 years old. She used round steak as well. None of this modern hamburger patties I see used in new recipes for Swiss steak. Lol. Round steak was always cheaper and this was always a great way to have round steak tender enough to eat it. I think she had a slightly different technique, as I remember her cooking it all in a big pan on stovetop. But it still simmered for a long time. I can't wait to try this. Brings back memories of my Italian mom, who passed away 3 years ago. I love your explanations and running commentary, as I think its a great way to teach and encourage young cooks.

I’m the same age as you, and I remember my mom making this in a huge Paul Revere pan on top of the stove. I remember what she put in it, but not the quantity. Now I have a recipe written from the author’s, and my memories will come back of her. But I didn’t like having to watch Ted Mack’s amateur hour, or Mitch Miller sing along show. A fair trade off for good food!

My mom taught me how to make this when I was a teenager. She called it poor man's meal, because it would feed me my brother and her and still have leftovers for her to take to work the next day. She would have the steak tenderizer at the butcher. When it was done we had mashed potatoes and green beans and biscuits to sop up the gravy. I made it for my husband on our first date and he fell in love with it. He said that was when I fixed that he knew I was a keeper.

Love Swiss steak! Louisville, Ky here. We had this often growing up but Mom always included stewed tomatoes in ours. I make it myself sometimes, but I like to eat over white rice. Growing up we usually had mashed potatoes with it and probably green beans from Daddy's garden. Mom cooked hers in an electric skillet on low for a couple hours. That looks so delicious. I always use round steaks to make a dish we call 8 hour steak. You simply take 2 round steaks, place them in a 9"x 13" pan. Pour 2 cans of cream of mushroom soup and 1 pkg. of Lipton onion soup mix on them. Cover with foil and place in a 200 degree F. oven for 6 to 8 hours. The soup makes a delicious gravy and I also serve it with mashed and corn. Too funny!

I cook round steaks in my casserole crock-pot like that. I do sear the steaks first, but no flour. Just a quick sear on each side then into the crockpot (it's the shallow 9" x 13" rectangular one). Add the soups, cover and cook on low all day long. It's just Crock-Pot Steak in Mushroom Gravy at our house.

Swiss steak is one of our family's favorite dishes!! My Grandparents made it. My Mom made it, and now I carry on the tradition! The children in our family who didn't have the opportunity to know their Great-grandparents or Great, great Grandparents, get to know them thru this dish. I love sharing stories of my Grandparents and my Mom with the younger kids. It allows them a connection with some of the best people in our family. When we need comfort food, I make Swiss steak. We make ours a little different. We use tomato juice as the broth and gravy. My son used to call his plate "Swiss steak with volcano potatoes." LOL. We also serve with corn and a salad with oil and vinegar dressing. Thank you for the video and walk down memory lane. I needed it today.

My mom always made Swiss steak but it was different a bit. But, it was just as tender and delicious! Dredge and fry it up the same. But she would cut onion, peppers and carrots and would mix beef broth with pan juices from frying meat as well as a big can of diced Italian tomatoes over the meat and cover and bake. The flour from steak would thicken everything perfectly and would have it with rice or mashed potatoes. Now I need to make some Swiss steak! Yummy either way to me!

This looks delicious! I have a similar recipe. When I first started working, many people swapped recipes and Swiss steak was one of them. There used to be a steak you could buy called Swiss steak. Haven't seen it in years, but round steak works as well. Just mix an envelope of Lipton dry onion soup mix with a can of Campbells cream of mushroom soup + 1 can water, cut the steak up into serving-size pieces, put all this in the Corelle dish and bake for 2.5 hours at 325 F or until steak is tender. (The mushroom soup, water and dry onion soup mix make a delicious gravy.) Not necessary to fry before baking. It is wonderful! I've made this for the last 50+ years! Of course, serve with mashed potatoes, corn (or vegetable of your choice) and rolls. Try is sometimes. It's wonderful.

Steak and gravey was my favorite meal as a kid. And still is my favorite as an adult. Mom always browned off the Steak in an iron skillet. Then made gravey from the dripings. Add the Steak back and simmered on low for several hours. It cut like soft butter. The only thing I do different now. Is I use a slow cooker to simmer it in. I even still pour the gravey over a slice of bread.

Put newspaper under it to help with spill over and clean up. Use your frying pan to make the gravy. All the fond is there, all the flavors! Now serve in the baking dish or frying pan. (Put the frying pan in the fridge while cooking the meat, reducing bacterial growth.). Add the excess flour to make the gravy! No waist easy clean up!
