Thank you so much for the content! 🥰I saw you say in one of your videos(I can't find it now) that you don't need to rest if you are using an air bake tray. Is that true for an oven with no fan assistance? Just a regular oven? I totally understand if you don't have the chance to get back to me, just super curious 🥰🥰

Hi Jaime! Yes, I’ve never had a fan function and it still works! The air bake tray has an Insulated bottom which allows the tops of your macaron shells to dry in the oven before the heat hits from the bottom and cracks your shells.

I'm kicking myself for not thinking of the black cocoa powder for my black/ galaxy macs. I'll try that on my next practice round.

Black cocoa powder really helps deepen the color of your dries so when you add it to your meringue, it stays truer to that color!!
