Do you really want to try this at home? OK! Here is the translated recipe, converted from the original which you can always find at the end of the video ^_^. Thank you for watching! "To make a rich Seed-Cake called the Nun's Cake" - The Art of Cookery, 1805 2 cups flour 3/4 cup sugar 3 whole eggs + 2 yolks A little over 1 cup of softened butter (1 & 1/8 cup) 2 tablespoons of caraway seeds 1 tablespoon of cinnamon OR 1 tsp of cinnamon extract (extract is what the original recipe calls for) A dash of rose water, to taste In a mixing bowl combine your flour, sugar, cinnamon and caraway seeds. Separately whisk your whole eggs & egg yolks then strain through a fine mesh strainer (random fact - mesh strainers in this time were made with horse hair!). In another bowl now mash the butter with your hands till it is soft and has the appearance of cream. Into this add your strained eggs and blend well with rose water. Pour half of your wet ingredients into your flour mixture and work well before adding in the remaining half. If using your hands or a spoon blend for 2 HOURS. If using an electric mixture mix for half an hour on a medium speed. If your batter seems to be dry add more rose water or milk to moisten. Pour into a well buttered mold and bake at 300 degrees for 2-3 hours depending on the size of the mold. Once the top has cracked and a toothpick comes out clean it is done. *Now, sometimes flour in the early 1800s had a higher moisture content than today's flour. Because of that this recipet calls for you to dry it before a fire. This is not required when using modern processed flour. *The original receipt asks you to mix it for 2 hours with your hands, not a spoon. Isn't that just lovely?

My mother (b. 1923, d. 2016) was the eldest child and had to bake biscuits every morning. This was in the South, and they took biscuits to school. Her recipe was made from scratch. She would tear open a brown paper bag, flour it, and use the inside surface to roll out the dough. Then she dipped the rim of a drinking glass in flour and used it to cut out the biscuits. I only tried to make them myself once and they came out flat and hard! I guess I handled the dough too much, or something! 😊

Bake a cake was really difficult before the invention of baking powder in the mid 1800s. They had to make yeast as well. Baking was a real pain in the butt. Took several hours.😢

It’s not a misprint. Out of curiosity, I googled nuns cake and this was was before baking powder was invented. Beating the cake for two hours was to incorporate air into the batter. This was similar to what pound cake is today.

Beating the cake for two hours is to whip air into the batter. The recipes has no leavening agents so the batter would not rise, so it would be very dense with no crumble if you didn't leaven it by beating air into it.

Thanks for teaching us about straining eggs and what it does. I had never heard of that. Me and my girls were just cracking up at you stirring at the hearth. Sorry to laugh at your pain. The outcome was beautiful. Love that chicken cake mold! ❤️❤️

The first time we hear Justine talking in a cooking video and it's out of frustration. Luckily, cinnamon makes everything better. I'm sure in a larger kitchen, everyone took turns beating the cake. And to think when I was younger I used to hate having to stir something for 50 strokes. I will say the density of the cake stood up well to your beautiful chicken mold.

Chalazae (kuh-LAY-zee) - Ropey strands of egg white which anchor the yolk in place in the center of the thick white. There are two chalazae anchoring each yolk, on opposite ends of the egg. They are neither imperfections nor beginning embryos. The more prominent the chalazae, the fresher the egg. Chalazae does not interfere with the cooking or beating of the white and need not be removed, although some cooks like to strain them from stirred custard.

Lord have mercy, 2 hours, Justine props to you for doing the entire time. I'd have pulled something if i did that for that long. Hope it was a misprint. If not, maybe with it being a nun cakes there was a group of nuns or cooks that split the time between them. Either that, or it was a desert for an extremely special occasion like after Lent or whatever.

I just started watching recently & have enjoyed watching & learning about recipes (receipts) in the 1800s. This one was probably one of my favorites because it was hilarious! You usually act like nothing affects you, but that TWO HOUR beating time...Your reaction was priceless! 🤣😂🤣

I always watch your videos before I go to bed, leaving the volume on, as my husband sleeps. He likes the sound of your quiet cooking. Needless to say we were BOTH surprised as Justine exclaimed "2 HOURS???!!!!??!!" I laughed so hard!!! I loved the reaction to the 2 hours. It made me chuckle as I had the same initial reaction. Of course I waited with anticipation on whether it was worth it. After thinking about it I suspect the 2 hrs was to try to add air into the batter as it seemed fairly dense.

Meanwhile I’d just take frozen washcloth out of freezer (I have a headache) and didn’t realize till almost 10 min later our whipped cream container was frozen to cloth..oops. Whipped cream didn’t melt.

Okay, I'm pausing this after the 2-hours! fit. Lol. When I first married and began serious cooking, I realized why the Proverbs 31 woman, "strengtheneth her arms." It's because of all that beating batters, chopping vegetables and meat, kneading bread!! My arms were hurting within a week after the honeymoon, and strong in a month. Whew! And that wasn't even any two hour beating session. One passage in the Little House books, one of the ladies beat the egg whites or whipping cream about two hours. It was for Laura's wedding, I think.

I suspect the "2 hours" applied to the baking time, but some sloppy typesetter also applied it to the beating time.

I will be substituting sesame seeds for caraway seeds as I cannot tolerate caraway seeds. And I would be using a whisk instead of a spoon. Justine is definitely doing it the hard way.
