omg the sugar thing is actually so relatable! everytime i bake something my mom says to only put a little butter and sugar but then the recipe doesn't work quite right so i don't really mess with the butter too much but i always put a little less sugar then stated in the recipe !

Some substitutions you can make it healthier without changing texture etc. - Replace oil with Apple Sauce. I do one for one but look online for their recommendation. - Replace any water with milk. It works great for brownies.

As someone who also goes to Hawaii every summer LA is a super fast pace but you should be able to handle it dont worry about that it's super fun :) and the people are very friendly as well as USC a great campus! The reason why recipes call for unsalted butter and add salt later is because different brands have different salt contents. But honestly, idk if it matters that much 🤷🏻‍♀️
